AB - Hemp is considered one of the potential novel crops for human and animal nutrition. This study aimed to determine the complete chemical composition of 29 different varieties of whole hempseeds. Fatty acid composition, amino acid profile, mineral composition, and cannabinoids content were also evaluated. All hempseed varieties were milled to obtain whole hempseed flour. Differences between hempseed varieties were significant (p < 0.05) for all measured parameters. Proximate composition results showed that crude protein and fat contents varied from 21.6–28.9% and 21.1–35.7%, respectively. Fatty acid profiles revealed that the three major fatty acids were linoleic acid (52.79–57.13%) followed by α-linolenic acid (12.62–20.24%), and oleic acid (11.08–17.81%). All essential amino acids were detected in all varieties, with arginine (12.66–17.56 mg/100 g protein) present in abundance, whereas lysine was limiting. Substantial differences were found in the mineral content, and potassium (509.96–1182.65 mg/100 g) and iron (5.06–32.37 mg/100 mg) were the main macroand microminerals found. All cannabinoids were found in small traces and tetrahydrocannabidiol (THC) was only detected in five varieties. To conclude, the nutritional composition of hempseeds with hull makes them suitable to be added into the diets of humans or animals as a highly beneficial novel ingredient.

AB - Infections with phytoplasma present one of the most significant biotic stresses influencing plant health, growth, and production. The phytoplasma ‘Candidatus Phytoplasma solani’ infects a variety of plant species. This pathogen impacts the physiological and morphological characteristics of plants causing stunting, yellowing, leaf curling, and other symptoms that can lead to significant economic losses. The aim of this study was to determine biochemical changes in peony (Paeonia tenuifolia L.), mint (Mentha × piperita L.), and dill (Anethum graveolens L.) induced by ‘Ca. Phytoplasma solani’ in Serbia as well as to predict the impact of the biotic stress using artificial neural network (ANN) modeling. The phylogenetic position of the Serbian ‘Ca. Phytoplasma solani’ strains originated from the tested hosts using 16S rRNA (peony and carrot strains) and plsC (mint and dill strains) sequences indicated by their genetic homogeneity despite the host of origin. Biochemical parameters significantly differed in asymptomatic and symptomatic plants, except for total anthocyanidins contents in dill and the capacity of peony and mint extracts to neutralize superoxide anions and hydroxyl radicals, respectively. Principal Component Analysis (PCA) showed a correlation between different chemical parameters and revealed a clear separation among the samples. Based on the ANN performance, the optimal number of hidden neurons for the calculation of TS, RG, PAL, LP, NBT, •OH, TP, TT, Tflav, Tpro, Tant, DPPH, and Car was nine (using MLP 8-9-13), as it produced high r2 values (1.000 during the training period) and low SOS values. Developing an effective early warning system for the detection of plant diseases in different plant species is critical for improving crop yield and quality.

AB - The development of active edible coatings with improved mechanical and barrier properties is a huge challenge. In this study, active edible coatings for sliced cheese have been developed using pullulan (Pull) in combination with two different biopolymers, chitosan (CS) and gelatine (Gel), and a combination of hydrolats as a source of active compounds with antimicrobial effects. In comparison to the monolayer coating, the bilayer coating system demonstrates improved barrier and mechanical properties. A preliminary assessment of the antimicrobial effect of lemongrass and curry plant hydrolats has revealed that both hydrolats exhibited antimicrobial activity against the targeted bacterium Staphylococcus aureus, albeit at different levels. The obtained results suggest that a mixture of 1.56% lemongrass and 12.5% curry plant hydrolats yielded a lower fractional inhibitory concentration (FIC) value. Bilayer coating systems (Pull/CS and Pull/Gel) with an incorporated mixture of hydrolats have demonstrated effectiveness in both cases: artificial contamination before application of the coating system and after application of the coating system. In both contamination scenarios, the coating systems consistently effectively limited bacterial proliferation, indicating the antimicrobial effect of the hydrolat mixture in the coating layers. In the case of artificial contamination before applying the coating system, both coatings demonstrated antimicrobial effectiveness, but the formulation with chitosan had a biocide effect, while the other, with gelatine, had only a bacteriostatic effect in a long-term setting. In the second case, both Pull/CS and Pull/Gel coatings demonstrated effectiveness in inhibiting bacterial growth regardless of the moment of contamination of the sample; the Pull/CS coating showed slightly better antimicrobial activity, achieving complete elimination of bacteria earlier compared with the Pull/Gel coating system.

AB - Sorghum grain (Sorghum bicolor L. Moench) is a gluten-free cereal with excellent nutritional value and is a good source of antioxidants, including polyphenols, as well as minerals with proven health benefits. Herein, the phenolic composition, elemental profile, and antioxidant activity of sixteen food-grade sorghum grains (S1–S16) grown under agroecological conditions in Serbia were determined. Nine phenolic compounds characteristic of sorghum grains, such as luteolinidin, 5-methoxyluteolinidin, luteolidin derivative, luteolidin glucoside, apigeninidin, 7-methoxyapigeninidin, apigeninidin glucoside, and cyanidin derivative, were quantified. The antioxidant potential of the analyzed sorghum grains was evaluated by UV/Vis (DPPH, ABTS, and FRAP) and Electron Paramagnetic Resonance spectroscopy (hydroxyl and ascorbyl radical scavenging assays). The content of macro- and microelements was determined by Inductively Coupled Plasma Optical Emission spectroscopy. Theoretical daily intakes of selected major and trace elements were assessed and compared with the Recommended Daily Allowance or Adequate Intake. Sample S8 had the highest amount of phenolic compounds, while S4, S6, and S8 exhibited the strongest antioxidative potential. The sorghum studied could completely satisfy the daily needs of macro- (K, Mg, and P) and microelements (Se, Zn, Fe). Pattern recognition techniques confirmed the discrimination of samples based on phenolic profile and elemental analysis and recognized the main markers responsible for differences between the investigated samples. The reaction between hydroxyl radicals and luteolinidin/apigeninidin was investigated by Density Functional Theory and thermodynamically preferred mechanism was determined.

AB - The aim of this study was to test the quality (physicochemical and sensory odor properties) and bioactivity (antimicrobial and antioxidant activities) of the essential oils (EO) obtained from the most frequently cultivated lavender and lavandin varieties in Serbia, whose cultivation areas were previously reserved for warmer climates, outside the agroecological region of Serbia. Seven EO from true lavenders (L. angustifolia Mill. and cultivars: ‘Hidcote blue’, ‘Munstead’, ‘Primorska’), Croatian indigenous lavandin cultivar (L. intermedia ‘Budrovka’), lavandin ‘Grosso’ and one undetermined lavender sample (Lavandula sp.) showed compliance with standard requirements for lavender EO composition (contents of linalool 23.9–30.2% and 28.9–36.9%, and of linalyl acetate 22.2–32.2% and 6.9–20.7% in true lavender and lavandin samples, respectively). All EO were characterized as pleasant, with a floral aroma as a prominent odor. Samples exhibited high antimicrobial activities (3.5–14.2 µL mL-1 MIC and MBC values) against important Gram-positive (B. cereus and L. monocytogenes) and Gram-negative bacteria (E. coli) and yeasts (C. albicans), and high antioxidant capacity (IC50 values of 0.23–0.59 g AAE mL-1 EO). This preliminary research on the quality of lavender EOs reveals the potential of this species for the future of medicinal and aromatic plant species production and further diversification of agriculture in the area.

AB - Safflower (Carthamus tinctorius L.) is an annual plant from the Composite family. The resistance to climatic conditions,
lack of water, and increased soil salinity makes a valuable alternative oil crop that has gained importance in recent years.
Safflower is a significantly cheaper variant of the related culture of saffron, which use can be higher in human and animal
nutrition, the textile and dye industry, biodiesel production, etc. Safflower can be said to be a "climate-smart" crop that
can adapt to changing environmental conditions thanks to its rich genetic diversity. Effective implementation of support
policies in technology, appropriate incentives, and marketing, especially in countries facing water deficits and changing
soil quality, has significant potential for improving food security and the income and livelihoods of people engaged in
agriculture. Safflower contains 90% of total unsaturated fatty acids, of which 14% are monounsaturated (MUFA) and
76% are polyunsaturated (PUFA).
nedostatak vode i povišen salinitet zemljišta.
i industriji boja, proizvodnji biodizela i sl.

AB - The pet food market has been very attractive and grown dramatically in the last decades offering a huge number of products that differ in physical form, composition of nutrients and physiological and pathological conditions. Approximately 30% of all pet food and pet care sales worldwide are made in Europe, which is regarded as one of the leaders in the sector. In Serbia as well, it is slowly starting to develop and gain importance. More and more families are acquiring pets causing the pet food industry to grow quickly. A recent research revealed that 99 percent of owners considered their pets to be "part" of the family. Over the years, dramatic changes in pet food industry making the basic pet foods more sophisticated that provide not only the right nutrients in optimal quantities but also much more than we call optimal.

AB - This study aimed to determine the variability properties of four major types of Amaranthus species in
protein and amino acids content in leaves and flowers. Obtained results by ion exchange chromatography in
our study have shown high values for the content of essential amino acids lysine and methionine. In the leaf,
the lysine content ranged from 3.9 (A. caudatus) to 7.0 (A. cruentus; A. moleros), and in the flowers from 4.2
(A. caudatus) to 6.7 (A. molleros). The methionine content ranged from 3.1 (A. caudatus) to 7.4 (A.
mantegazzianus) in the leaf and in the flower from 2.9 (A. caudatus) to 6.7 (A. mantegazzianus). Besides lysine
and methionine, significant values of other essential amino acids were recorded, respectively. Significant
concentrations of total proteins were recorded in all examined genotypes. The heritability of the studied
characters as protein and mineral content of seeds and leaves, and oil contents of seed were significantly high.
The maximum values of the protein content of seeds were 16.55% (A. cruentus), in leaves 20.10% (A. caudatus),
and the minerals in seeds 2.73% (A. moleros), and leaves 18.76% (A. mantegazzianus). The oil content of seeds
was 6.16% (A. moleros). The oil content of the seed’s proportion of genetic variance to total phenotypic variance
was 72%, and it has a significant impact on ecological factors. Tested divergent Amaranthus genotypes may
serve as parents for further crossing. Amaranth seeds is gluten-free and is important in the diet of celiac patients
and contains amino acids, especially lysine, which acts against the herpes virus. Amaranth from amaranth leaves
biologically active substance that prevents heart muscle damage during ischemic processes. Amaranth seed oil
has hypolipemic, anti-atherosclerotic, hypotensive and antioxidant activity.

mantegazzianus) in the leaf and in the flower from 2.9 (A. caudatus) to 6.7 (A. mantegazzianus).
Amaranth seed oil
has hypolipemic, anti-atherosclerotic, hypotensive and antioxidant activity.",

AB - Cereals represent a staple food for a majority of the world’s population and play an important role in food security and nutrition. They are the most produced crops in the world (2777 million tons in 2020), with maize, wheat, and rice comprising more than 80% of total cereal production (FAOSTAT, 2021). The distribution of cereal production around the world depends on various factors (environmental, cultural, political, and economic), among which temperature and water availability have a major impact on crop growth in a given region (Awika, 2011). Maize is the mostly produced cereal crop in the world with over 1162 million tons produced in 2020. The United States of America is the largest producer of maize, accounting for 30% of world production in 2020, followed by China at 22.7% and Brazil at 8.8%. World wheat production in 2020 reached 761 million tons. China and India are the world’s largest producers of wheat, producing approximately 31% of world wheat in 2020, followed by the Russian Federation (9.7%) and the United States (6.8%). World rice production stood at 757 million tons in 2020. Asia is the world’s largest producer of rice, producing about 90% of world rice, with China and India accounting for 57% of world rice production in 2020 (FAOSTAT, 2021). In regions where the main problem is frequent droughts, like in some parts of Africa and India, drought-tolerant crops, such as sorghum and millet, are commonly grown. On the contrary, barley is mostly produced in Northern Europe, northern parts of the United States of America and Canada being more tolerant to cold
climates.

AB - Tomato is one of the most important species belonging to the Solanaceae family. Focusing on the importance of tomato in human nutrition and the problem of narrowed genetic variability, the aim of the study was to assess morphological and chemical diversity in IFVCNS germplasm collection. Twenty genotypes were analysed for the morphological and chemical fruit traits: average mass (g), length (cm), diameter (cm), pericarp thickness (mm), locules number, moisture content (%), total soluble solids (°Brix), ash content (%), total acidity (%) and pH value. Selected plant material for analysis included: landraces, traditional varieties, breeding lines and commercial varieties. Differences among tomato genotypes in all fruit traits were determined. Fruit mass and locules number had the highest coefficient of variation. The least differences between genotypes were observed in the fruit moisture content. Four principal components accounted for 90.6% of total variance or 36.5%, 24.2%, 19.8% and 10.1%, respectively. Along the axis of the first main component, genotypes were classified into three groups. The first component was defined by fruit length, diameter and mass. The second component was correlated with pericarp thickness and locules number, and the third with moisture content, ash content and total soluble solids. Based on the cluster analysis, genotypes were classified into three groups which were in agreement with the PCA groups. Hybridization between genotypes from different groups was proposed in order to create new hybrids and varieties and to increase tomato germplasm diversity. By crossing those genotypes, improved recombinations in morphological and chemical traits can be expected.

AB - Camelina has been used from ancient times, but recently has re-emerged as a valuable plant with the potential for successful replacement of conventional oilseed crops. The utilisation of camelina and its by-products in animal feed is a matter of scientific study due to their excellent nutritional potential. The present study aimed to investigate the nutritive value of two Serbian camelina seed genotypes (NS Zlatka and NS Slatka) as a potential alternative to commonly used oilseed crops in animal feeding. For that purpose proximate composition, fatty acid profile, amino acid profile and tocopherols were analysed. The study also included the investigation of the content of anti-nutritive compounds that can adversely affect the nutritional value of feed. The results showed that camelina seeds had a high amount of proteins (around 28%), amino acids and γ- tocopherols. Camelina genotypes were characterized by unique fatty acids composition, with its oil consisting of approximately 57% polyunsaturated fatty acids, of which the highest proportions were α-linolenic acid (~37%) and linoleic acid (~17%). An optimal ratio of n-6 and n-3 fatty acids (0.5) was also reported in this study. The concentration of anti-nutritional factors and heavy metals in camelina seeds was below the maximum set limit for feedstuff. To conclude, the investigated Serbian camelina genotypes can be used as a valuable source of proteins, essential fatty acids and tocopherols in animal nutrition and has a great potential to replace conventional oilseeds

AB - Mycotoxins in maize represent a great threat to human health. For this reason, novel technics such as ozone treatment are used to reduce the content of maize mycotoxins. However, there is little knowledge about the effect of ozone treatment on maize quality parameters. This study investigated the changes in Fusarium and Aspergillus mycotoxins and the changes in fatty acids during the ozone treatment of maize samples. Sixteen maize hybrids were visually tested for the naturally occurring ear rot severity and treated with three different concentrations of ozone (40, 70, and 85 mg/L). Mycotoxin content in maize samples was determined using a high-performance liquid chromatography (HPLC) system, whereas dominant fatty acids were determined using gas chromatography coupled with a flame ionization detector (GC-FID). Ozone treatments could be successfully applied to reduce the content of mycotoxins in maize below the detection limit. Ozone treatments increased the content of monounsaturated fatty acids (MUFAs) and decreased the content of polyunsaturated fatty acids (PUFAs), i.e., linoleic acid (36.7% in relation to the lowest applied ozone concentration), which negatively affected the nutritional value of maize.

AB - Biodegradable active packaging films based on a cellulose acetate and poly(caprolactone diol) blend with incorporated lemongrass oil were developed. Films were prepared using a novel bio-based plasticizer, glycerol tritartarate, synthesized using the principles of green chemistry. The influence of the plasticizer, as well as the essential oil amount, on the structural, surface, mechanical, and thermal properties of the blend was investigated. The plasticizer was shown to work as a compatibilizer for two polymers, according to the results of scanning electron microscopy and surface energy analysis. Blends with a greater amount of plasticizer possessed better mechanical properties but showed worse resistance to water. The antimicrobial property of the blend with lemongrass oil was found to be superior to that of the blend without essential oil. The incorporation of lemongrass oil into the polymer blend resulted in one more step longer thermal degradation process. The optimal film properties, biodegradability, cost-effective preparation method, and additional functions made these films suitable for the production of packaging for grapefruit.

AB - It is considered that one of the greatest food safety concerns worldwide is aflatoxins (AFs) contamination of cereals, due to its carcinogenic effects, high number of associated notifications in cereal based food and feed products, as well as in milk and dairy products. AFs produced mainly by Aspergillus flavus and Aspergillus parasiticus, are the most toxic and frequent contaminants of cereals, especially in areas with hot and humid climates. Changes in temperature and water availability related to global climate changes (increased temperature, heavy rainfalls, and droughts) are modulating factors of filamentous fungi growth and production of mycotoxins. Amongst all favouring factors, environmental factors (temperature, water activity (aw) and relative humidity (RH)) and climate change have been identified as the primary factors.

for measuring quality properties in real time. The aim of this paper was to contribute to
the study of the relationship between sensory and instrumental data, and to define a proper model for predicting sensory properties of fresh tomato through the determination of the
physicochemical properties. Principal Component Analysis (PCA) was applied to the
experimental data to characterize and differentiate among the observed genotypes, explaining 73.52% of the total variance, using the first three principal components.
Artificial neural network (ANN) model was used for the prediction of sensory properties
based on the results obtained by basic chemical and instrumental determinations. The
developed ANN model predicts the sensory properties with high adequacy, with the
overall coefficient of determination of 0.859.

AB - The demand for alternative sources of energy and protein in animal nutrition has notably
increased in recent decades. Camelina seed and its by-products from oil manufacturing
have gained much attention due to the high nutritional value. Therefore, the present
paper focuses on determination of fatty acid content in the cold-pressed camelina cake
and thus evaluation of its potential as a valuable source of essential fatty acids in animal
feeding. For that purpose, camelina cakes were obtained as a by-product from the coldpressed oil production. Two genotypes of camelina seed (Camelina sativa) (NS Zlatka
and NS Slatka) were used in this study. The obtained results showed that both cakes
had high content of lipids, while NS Zlatka demonstrated higher lipid content (16.1%)
than NS Slatka (14.8%). Both camelina cakes had similar content of saturated (SFA),
monounsaturated (MUFA) and polyunsaturated fatty acids (PUFA). Among SFA, the
most dominant was palmitic acid, followed by stearic, arachidic and myristic acid. Oleic
acid and eicosenoic were predominant in MUFA. Eruca acid was found in camelina
cakes at the amount of 3.0 and 3.3% for NS Slatka and NS Zlatka, respectively. Over
half of the total fatty acids in camelina cakes were constituted of PUFA, of which the
highest share were linoleic (n-6) and α-linolenic acid (n-3).

AB - This study investigates distribution of three micronutrients in milling streams of three common wheat cultivars to estimate nutritive value of white and brown flours. Among the analysed wheat cultivars, the majority of flour streams of NS Todorka showed a higher content of soluble micronutrients than the other two investigated wheat cultivars. It is necessary to improve bioavailability of Fe and Zn in flours since these micronutrients were mostly in insoluble form. In contrast, considering average Serbian portion sizes for bread, bread made from flour Type '110' could supply almost 75% of the recommended daily intake for Mn.

AB - BACKGROUND In the present paper, a method for differentiation between common and spelt wheat grown in different farming systems (biodynamic, ecological, integrated, conventional), based on biomarkers identified from aqueous flour extracts (nitrogen and 14 soluble carbohydrates) was employed. RESULTS The identification and determination of soluble carbohydrate content were carried out using gas chromatography-mass spectrometry, with the UV spectrum generated by mass spectrometry for comparison with the WILEY database. Soluble carbohydrates were determined in the peak area between 21.92 and 43.63 min(-1) retention time. The obtained data set was analyzed by multivariate statistical techniques. It was revealed that common wheat exerted a much more pronounced tendency than spelt wheat to be influenced by the farming system. CONCLUSION This differentiation was particularly well visualized after subjecting the data set to principal component analysis (PCA) and cluster analysis (CA). In the PCA graph, all spelt samples were positioned closer to the corresponding control sample, in contrast to the wheat samples, which were distributed over a huge area in the factor space. CA showed that the spelt samples grown under different farming systems were highly similar and grouped into one cluster. Common wheat samples cultivated under organic, biodynamic and integrated system were similar and represented the second cluster, whereas that cultivated under the conventional system was clearly separated from other samples.

AB - This work aimed to obtain a validated model for the prediction of retention times of compounds isolated from Origanum heracleoticum, Origanum vulgare, Thymus vulgaris, and Thymus serpyllum essential oils. In total 68 experimentally obtained retention times of compounds, which were separated and detected by GC-MS were further used to build the prediction models. The quantitative structure–retention relationship was employed to foresee the Kovats retention indices of compounds acquired by GC-MS analysis, using eight molecular descriptors selected by a genetic algorithm. The chosen descriptors were used as inputs for the four artificial neural networks, to construct a Kovats retention indices predictive quantitative structure–retention relationship model. The coefficients of determination in the training cycle were 0.830; 0.852; 0.922 and 0.815 (for compounds found in O. heracleoticum, O. vulgare, T. vulgaris and T. serpyllum essential oils, respectively), demonstrating that these models could be used for prediction of Kovats retention indices, due to low prediction error and high r2.

AB - This study aimed to test different chemical agents to obtain microbiologically safe industrial hemp seeds that could be used for further food processing (with the reduced total number of microorganisms, total number of moulds and yeasts, and total number of Enterobacteriaceae). In order to obtain seeds applicable for food consumption, optimal storage temperature conditions (room temperature, refrigerator, freezer), method of seed packaging (vacuum/without vacuum), and the application of various chemical treatments (ethanol, sodium hydrogen carbonate, sodium hypochlorite) were tested on the certified industrial hemp seeds, produced in two consecutive years. Optimal storage conditions differed for different microorganisms, and the most optimal storage was at room temperature, for seeds produced in 2018, in the treatment to reduce the total number of Enterobacteriaceae and the total number of microorganisms. When storing seeds from 2018 in order to reduce the number of yeasts and moulds, a slightly lower number was spotted when seeds were stored in a vacuum-sealed bag, at the refrigerator/freezer temperature. For hemp seeds produced in 2019, the most optimal storage conditions were at the refrigerator (for reduction of the total number of Enterobacteriaceae) and freezer temperature (for reduction of the total number of microorganisms). For the reduction of the total number of moulds and yeasts, optimal conditions were at room temperature. Ethanol (75%, v/v) was the most effective disinfectant among the tested chemicals regardless of the initial number of microorganisms, with log reduction of 3.2 (for the total number of Enterobacteriaceae), 2.9 log (for the total number of microorganisms), and total reduction of the total number of yeasts and moulds after 10 minutes, for the seeds harvested in 2019, which were far more contaminated than the seeds harvested in 2018. Considering the price of the disinfection method with ethanol, sodium hypochlorite may be a better solution for the reduction of the number of microbiota on the seeds.
