AB  - Changes in yield components and spike traits are associated with wheat grain yield genetic progress. The aim of this study was to determine variation in yield components, spike and individual grain traits, and their role in winter wheat grain yield genetic improvement under conditions of the Pannonian Plain. Therefore, two-year field trials were conducted in a southern Pannonian location (Novi Sad, Serbia) with ten winter wheat cultivars released between 1931 and 2015. The grain yield had a significant positive linear relationship with the year of cultivar release, showing the improvement rate of 46.4 kg ha−1 yr−1. Grain yield increase has been positively related to the improvement of spike grain weight. Spike grain weight improvement with a rate of 0.25 g yr−1 was followed by simultaneous rise of the individual grain number and grain weight at different positions within a spikelet. Compared to other grains at different positions within a spikelet, G3 grains showed the highest rate of grain weight and the grain number improvement with the year of cultivar release. On the other hand, there was a significant decrease trend of grain protein content in individual grains at different positions. Therefore, wheat breeders should be more focused on grain number and weight improvement of distal grains in order to regain higher grain yield genetic gain under conditions of the Pannonian Plain.

AB  - Maize is a globally significant cereal crop, contributing to the production of essential food products and serving as a pivotal resource for diverse industrial applications. This study investigated the proximate analysis of maize hybrids from different FAO maturity groups in Serbia, exploring variations in polyphenols, flavonoids, carotenoids, tocopherols, and fatty acids with the aim of understanding how agroecological conditions influence the nutritional potential of maize hybrids. The results indicate substantial variations in nutritional composition and antioxidant properties among different maturity groups. The levels of total polyphenols varied among FAO groups, indicating that specific hybrids may offer greater health benefits. Flavonoids and carotenoids also showed considerable variation, with implications for nutritional quality. Tocopherol content varied significantly, emphasizing the diversity in antioxidant capacity. Fatty acid analysis revealed high levels of unsaturated fatty acids, particularly linoleic acid, indicating favorable nutritional and industrial properties. The study highlights the importance of considering maturity groups in assessing the nutritional potential of maize hybrids.

AB  - U ovom radu proučavan je sadržaj ulja i proteina kod 30 komercijalnih NS hibrida kukuruza iz različitih perioda selekcije u cilju određivanja njihove namene u procesnoj industriji. Za određivanje sadržaja ulja korišćena je standardna metoda po Soxhlet-u, dok je za određivanje sadržaja proteina korištena standardna metoda po Kjeldahl-u. Prosečan sadržaj ulja u zrnu svih analiziranih hibrida kretao se u intervalu od 4,05 do 6,14% s.m., dok je prosečan sadržaj proteina bio u rasponu od 8,67 do 13,05% sm. Pet NS hibrida kukuruza mogu se okarakterisati kao visokouljani hibridi, dok je prema sadržaju proteina samo hibrid G27 imao vrednost višu od 13% što ga čini važnim biljnim izvorom proteina. Gajenje hibrida kukuruza visokog kvaliteta proteina obezbedilo bi proizvodnju biljnih proteina veće hranljive i biološke vrednosti za ishranu ljudi i domaćih životinja.
AB  - In this paper is examined oil and protein content of 30 maize NS hybrids to evaluate it purpose for process industry. The standard Soxhlet method was used to determine the oil content, while the standard Kjeldahl method was used to determine the protein content. The average oil content in the grain of all tested hybrids ranged from 4.05% to 6.14% d.m. basis, while the average protein content ranged from 8.67% to 13.05% d.m. basis. Five NS maize hybrids can be characterized as high-oil hybrids, while only one corn hybrid had a value over 13% per d.m. basis.

Genotype and fertilization effect on nitrogen content in maize (Zea mays L.)

AB  - Nitrogen (N) is an essential nutrient for maize growth and development, as well as an important factor in sustainable maize production. Timing and rate of nitrogen fertilizer application can influence maize grain yield, N uptake, and nitrogen use efficiency (NUE) parameters. Efficient nitrogen fertilizer management is essential for achieving economic yields and for enhancing N use efficiency. The experiment was conducted at the Institute of Field and Vegetable Crops, National Institute of the Republic of Serbia situated at N 45° 19’, E 19° 50’. An experiment was a randomized complete block design (RCBD) in a factorial arrangement with four replications during the two years. Four divergent maize, NS-4023, NS-6010, NS-6030 and NS-640 were grown under eight nitrogen combinations: fertilizer combinations with nitrogen addition in autumn and spring. The following factors were studied: N1: P60K60; N2: P60K60 + Nmin spring; N3: P60K60 + N40autumn + Nmin spring [(nitrogen added based on mineral nitrogen content in spring (NO3-N)]; N4: P60K60 + N60spring; N5: P60K60 + N100spring; N6: P60K60 + N40autumn + N60spring + Zn; N7: P60K60 + N40autumn + N80spring + Zn; N8: P60K60 + N160spring + Zn in both years of study. Zinc was applied as zinc sulfate (ZnSO4) in the amount of 1.0 kg ha-1 with foliar spraying, in the fourth and sixth week after sowing. Plant tissue analyses included contents of nitrogen in leaves and grain. Leaf samples (25 leaves) were taken under the cob in the silking stage (the second half of July). After maize harvest from each elementary plot cobs were taken for nitrogen analysis in grain. Results showed a fairly wide variability for leaf (1.91-2.58%) and grain N concentration (1.22-1.42%), amongst the hybrids, across different nitrogen systems fertilization. The two-way interaction of year and fertilization rate, fertilization rate and genotype significantly affected leaf and grain nitrogen concentration, respectively. Future studies need to be done in different locations in South Pannonian Basin to investigate the rates and timing effects of mineral fertilizers on the on the mineral composition and productivity of the maize.

Four divergent maize, NS-4023, NS-6010, NS-6030 and NS-640 were grown under eight nitrogen combinations: fertilizer combinations with nitrogen addition in autumn and spring. The following factors were studied: N1: P60K60; N2: P60K60 + Nmin spring; N3: P60K60 + N40autumn + Nmin spring [(nitrogen added based on mineral nitrogen content in spring (NO3-N)]; N4: P60K60 + N60spring; N5: P60K60 + N100spring; N6: P60K60 + N40autumn + N60spring + Zn; N7: P60K60 + N40autumn + N80spring + Zn; N8: P60K60 + N160spring + Zn in both years of study. Zinc was applied as zinc sulfate (ZnSO4) in the amount of 1.0 kg ha-1 with foliar spraying, in the fourth and sixth week after sowing. Plant tissue analyses included contents of nitrogen in leaves and grain. Leaf samples (25 leaves) were taken under the cob in the silking stage (the second half of July). After maize harvest from each elementary plot cobs were taken for nitrogen analysis in grain. Results showed a fairly wide variability for leaf (1.91-2.58%) and grain N concentration (1.22-1.42%), amongst the hybrids, across different nitrogen systems fertilization. The two-way interaction of year and fertilization rate, fertilization rate and genotype significantly affected leaf and grain nitrogen concentration, respectively. Future studies need to be done in different locations in South Pannonian Basin to investigate the rates and timing effects of mineral fertilizers on the on the mineral composition and productivity of the maize.",

AB  - Combined drying, an energy-efficient method that includes osmotic pretreatment in molasses and shortened successive lyophilization, was used to obtain celery root powder and incorporate it in the formulation of cookies, with the aim of obtaining a new product. Wheat flour was substituted with combinedly dehydrated celery root powder at levels from 0 to 30%, and optimization of the amount of wheat flour substitution regarding technological, sensory and nutritive characteristics was performed. The optimal level of 20% substitution was determined using Z-score analysis, from the aspect of the best nutritive improvement and the mildest adverse impact on the technological and sensory quality. In the second research phase, comparison of the cookies with the 20% celery root powder substitution, dehydrated by different methods, indicated that combined dehydration showed upgraded results in terms of the overall quality of the final product, for 28.85 percentile points higher than cookies with lyophilized and for 65.24 percentile points higher than cookies with the addition of convectively dried celery root powder. The cookie containing celery powder previously osmodehydrated in molasses had higher contents of analyzed minerals (1.2–3.3 times), total phenols (10.8%) and antioxidant activities (14% for DPPH and 4% for ABTS) compared to the cookie with lyophilized powder.

While wheat yields might rise in specific regions such as Western Europe and Canada, significant reductions are anticipated in countries such as India and Pakistan. Similar challenges are faced by rice production, particularly in regions such as Central Asia and Europe, with potential global yield decreases of up to 13.1%. These findings underscore the urgent need for adaptation strategies, including crop changes and altered sowing seasons, emphasizing the critical role of precise predictions in mitigating climate change’s impact on global agriculture. Elevated CO2 levels lead to starch accumulation, diluting proteins and minerals in crops such as wheat and rice, while elevated temperatures and drought conditions affect grain constituents and oilseed quality. Additionally, climate change influences antinutrient levels and fosters mycotoxin-producing fungi, posing health risks. As climate change intensifies, innovative plant breeding approaches are crucial to develop resilient crops. Integration of high-throughput phenotyping, molecular markers, machine learning, CRISPR/Cas genome editing, and speed breeding creates a powerful toolkit. These multidisciplinary methods not only accelerate breeding but also ensure precision agriculture, enabling swift adaptation to climate challenges and securing the global food supply. Traditional breeding coupled with advanced genomic tools provides a foundation for creating climate-resilient “smart crops,” bridging the gap between production demands and unpredictable climate changes.

AB  - Sunflower seeds are key agricultural commodities due to their nutritional and industrial value. This study aimed to analyze the distribution of targeted bioactive compounds and assess the physical properties across 27 sunflower seed genotypes, including parental lines and F1 and F2 hybrids, cultivated in Serbia. Various analytical techniques were employed to determine the chemical composition and physical characteristics of the seeds. This research revealed significant genetic variability in fatty acid profiles, with differences in polyunsaturated and saturated fatty acid levels among the genotypes. Hybrid seeds displayed variations in 1000-seed weight and bulk density compared to parental lines, which exhibited higher essential fatty acid contents and mechanical properties advantageous for industrial processing. These insights highlight the potential for refining breeding strategies to improve seed quality for specific industrial purposes. Overall, this study emphasizes the critical role of genetic selection in enhancing the nutritional and processing qualities of sunflower seeds, offering valuable perspectives for advancing agricultural and breeding practices.

AB  - Wheat is the most important plant used for human consumption in Europe and represents the crop most widely grown in the organic agriculture. Moreover, wheat also represents the largest range of organic products available on the market. Because of its importance, for the improvement of organic wheat production great efforts and resources are invested. The main goal is to obtain high and stable yields. During the breeding process of wheat (Triticum aestivum L.), when creating a new variety for organic use, it is necessary to incorporate genes responsible for high yield potential and adaptability to different production conditions. In order to determine the variability of grain yield, hectolitre weight, 1000 grain weight and plant height, collection of 30 winter wheat cultivars widely grown in the Pannonian Plain was chosen. The experiment was carried out in a typical Pannonian location at the experimental field of the Institute of Field and Vegetable Crops, Novi Sad, Serbia. The results showed significant variations in the examined traits between the chosen cultivars. Knowledge about the variability between the wheat cultivars could be used for selecting the most suitable ones for breeding in the organic agriculture of the Pannonian Plain.

AB  - This study investigated the relationship between yield, thousand kernel weight (TKW), and crude protein of soft white winter wheat–club variety (Barbee) and soft white winter wheat common variety (Zvezdana) susceptible to leaf rust and powdery mildew under different cultivation practices. Results revealed divergence in associations between yield, TKW, and crude protein loss of winter wheat varieties susceptible to obligate pathogens. Under the same level of leaf rust infection, N-input limited yield loss of the two varieties but not to the same extent. TKW loss was affected only by variety × cultivation practice and was significantly correlated with yield loss (r = −0.727, p = 0.011) and crude protein loss (r = −0.600, p = 0.05) only in club winter wheat. We suspected that Ninput affects the difference in the relationship between yield and TKW loss among varieties. Crude protein and yield loss had a low association (R2 = 18%, p = 0.05). Finally, this study indicated that more attention should be paid to the determination of pathogen pressure that triggers yield loss. It also pointed out that yield, TKW, and crude protein response to fungicides could differ in susceptible varieties. The contribution of fungicide to yield enhancement was highly associated with the specific reaction of the variety to pathogen infection rather than solely the disease level itself.

Results revealed divergence in associations between yield, TKW, and crude protein loss of winter wheat varieties susceptible to obligate pathogens. Under the same level of leaf rust infection, N-input limited yield loss of the two varieties but not to the same extent. TKW loss was affected only by variety × cultivation practice and was significantly correlated with yield loss (r = −0.727, p = 0.011) and crude protein loss (r = −0.600, p = 0.05) only in club winter wheat. We suspected that Ninput affects the difference in the relationship between yield and TKW loss among varieties. Crude protein and yield loss had a low association (R2 = 18%, p = 0.05). Finally, this study indicated that more attention should be paid to the determination of pathogen pressure that triggers yield loss. It also pointed out that yield, TKW, and crude protein response to fungicides could differ in susceptible varieties. The contribution of fungicide to yield enhancement was highly associated with the specific reaction of the variety to pathogen infection rather than solely the disease level itself.",

AB  - Proizvodnja strnih žita u sezoni 2022/23. bila je obeležena značajnom klimatskom varijabilnošću i pojavom intenzivnih bolesti, posebno žute rđe. Ovi uslovi žnačajno su uticali na prinos i kvalitet zrna. Tokom sezone, bilo je izuzetno toplih jesenjih i zimskih perioda, umerenih temperatura u prolećnom delu vegetacije i obilnih padavina u fazama formiranja, nalivanja i sazrevanja zrna. Izazovi su se javili i u veži sa visokim troškovima ulaganja u proizvodnji, što je dovelo do smanjene upotrebe mineralnih đubriva. Udeo nedeklarisanog semena, sa nepoznatom upotrebnom vrednošću, dostigao je oko 60%, što je rezultat dugogodišnjih neodgovarajućih odnosa između primarnih proižvođača, otkupljivača pšenice i države.

AB  - Cilj ovog rada je bio da se u datim agroekološkim uslovima ispitaju dinamika nakupljanja suve materije u zrnu i visina prinosa u zavisnosti od hibrida kukuruza različite dužine vegetacije. Ogled je postavljen po RCB dizajnu sa 12 hibrida, u četiri ponavljanja, na oglednom polju Rimski Šančevi, Instituta za ratarstvo i povrtarstvo. Praćenje dinamike nakupljanja suve materije u zrnu je vršeno u periodu od svilanja do fiziološke zrelosti, na svaka tri dana, za svaki hibrid. Prikupljeni podaci o dinamici suve materije u zrnu su analizirani u programu SegReg. Na osnovu vremenske analize, kod svih hibrida je nakupljanje suve materije pratilo linearni trend do maksimuma tj. prelomne tačke, od koje se sadržaj suve materije nije menjao. Kod najranijeg hibrida (NS-1) je maksimalni sadržaj suve materije (0.255g) postignut 39 dana nakon svilanja (DNS), dok je kod najkasnijeg hibrida (NS-12) maksimalni sadržaj suve materije iznosio 0.249g i postignut je 42 DNS.
AB  - The aim of this study was to examine the dynamics of dry matter accumulation in the grains of maize hybrids of different maturity groups and their yield in the provided agroecological conditions. The trial was organised as a RCB design, with 12 hybrids in four replications, and was conducted at the Rimski Šančevi experimental field of Institute of Field and Vegetable Crops in Novi Sad (IFVCNS). The progression of dry matter accumulation in the grain was monitored in the period from silking to physiological maturity, at three-day intervals, for each hybrid. Collected data were analyzed in the SegReg program. The dry matter accumulation followed a linear trend until the breaking point (linear plateu regression), from which its content remained stable. The earliest hybrid (NS-1) achieved the maximum dry matter content (0.255g) at 39 days after silking (DAS), while the latest hybrid (NS-12) reached its maximum dry matter content (0.249g) at 42 DAS.

AB  - Prilikom stvaranja novih sorti pšenice (Triticum aestivum L.), pored visokog potencijala za prinos i dobrog tehnološkog kvaliteta neophodno je i inkorporirati gene odgovorne za otpornost prema poleganju, niskim temperaturama i adaptabilnost na različite uslove proizvodnje. NS Lenija, nova sorta ozime pšenice stvorena u Institutu za ratarstvo i povrtarstvo (Institut od nacionalnog značaja za Republiku Srbiju) nastala je veštačkim ukrštanjem tri divergentna roditelja: sorte Kupava (Rusija) i sorti Donna (Srbija) i Arija (Srbija). Ukrštanjem ovih roditelja uspešno su iskombinovani geni odgovorni za visok potencijal za prinos, dobar tehnološki kvalitet, adaptabilnost i stabilnost, koji omogućavaju da se ova sorta može uspešno gajiti u agroekološkim uslovima Jugoistočne Evrope. Tokom trajanja dvogodišnjih ogleda Komisije za priznavanje sorti, NS Lenija je uspešno prošla DUS test (različitost, uniformnost i stabilnost), i na 7 ispitivanih lokaliteta ostvarila je u proseku značajno veći prinos zrna u odnosu na prosek prinosa zrna sorti standarda. Prilikom ocena hemijsko-tehnoloških osobina, svrstana je u kvalitetnu klasu II, u farinogramsku kvalitetnu grupu A-2, i u tehnološku grupu poboljšivača.
AB  - During the creation of new wheat cultivars (Triticum aestivum L.), in addition to high yield po tential and good technological quality, it is necessary to incorporate genes responsible for resistance to lodging, low temperatures and adaptability to different production conditions. NS Lenija, a new winter wheat cultivar developed at the Institute of Field and Vegetable Crops (National Institute of the Republic of Serbia) was created by crossing the three divergent parents: cultivar Kupava (Russia) and the cultivars Donna (Serbia) and Aria (Serbia). By crossing these parents, genes responsible for high yield potential, good technological quality, adaptability and stability were successfully combined, enabling this cultivar to be successfully cultivated in the agroecological conditions of Southeast Europe. During the two-year trials of the Commission for the registration of varieties, NS Lenija successfully passed the DUS test (distinctness, uniformity and stability), and on the 7 tested locations achieved a significantly higher average grain yield compared to the grain yield of the check cultivars. When evaluating its chemical and technological properties, it was classified in quality class II, farinograph quality group A-2, and in the technological group of improvers.

AB  - Widespread usage of intercropping systems has been limited because of a lack of knowledge about the key factors that affect the performance of intercrop components. We used general linear modelling to explain the effect of different cropping systems on the relationships among yield, thousand kernel weight (TKW), and crude protein of cereal crops under the same agro-ecological conditions and naturally occurring inocula of obligate pathogens. The results of our study showed that the yield variation under extreme fluctuations in climatic conditions could be lowered through intercropping cultivation. The disease indices of leaf rust and powdery mildew were highly dependent on the type of cultivation. The relationships among the levels of pathogenic infection and yield performances were not straightforward and were highly dependent on the yielding potentials of the cultivars. Our study indicated that changes in yield, TKW, and crude protein, as well as their relationships during intercropping cultivation, were cultivar specific and, therefore, not the same among all cereal crops exposed to the same agro-ecological conditions.

Micronutrient composition of milling streams of traditional wheat cultivars from Serbia

AB  - The deficiency of micronutrients in the human diet is widely recognised as a global problem. The objective of this study was to assess the content of two essential minerals, iron and zinc, in milling streams of old heritage wheat cultivars that have not been produced for more than a half-century to discover potential parent lines with high mineral content for breeding. Kernel size of seven Serbian old wheat cultivars was evaluated for ash content, thousand-grain weight and share of specific kernel fractions. Three cultivars, Crnozrna, Rumska Crvenka and Stara Banatka, were selected as the most appropriate for milling and further analysis of mineral content in the milling streams. The cultivars were milled in a laboratory mill to obtain six flour and two byproduct streams. At the same time, iron and zinc content was determined on a graphite furnace atomic absorption spectrometer. After mixing all six flour streams obtained from each cultivar, three different flour types were obtained. The flour with the highest ash content was the "1100" type originating from cultivar Stara Banatka, characterized by the highest iron and zinc content (54.9 mg/kg d. b. and 5.407 mg/kg d. b., respectively). It was estimated that consumption of a daily average bread portion (166 g according to national statistical data) made from Stara Banatka flour could provide about 90% of the recommended daily intake for iron. Therefore, Stara Banatka may be a target cultivar for wheat breeders searching for high-iron parent wheat lines.
AB  - Nedostatak mikronutrijenata u ljudskoj ishrani predstavlja globalni problem. Cilj ovog rada je određivanje sadržaja dva esencijalna metala, gvožđa (Fe) i cinka (Zn) u frakcijama dobijenim pri mlevenju tradicionalnih starih sorti pšenice koje se nisu proizvodile više od pola veka u cilju pronalaženja frakcije sa visokim sadržajem esencijalnih metala koje bi poslužile za oplemenjivanje. Kod sedam starih srpskih sorti pšenica određeni su sledeći parametri veličine zrna: sadržaj pepela, masa hiljadu zrna i udeo specifičnih frakcija zrna. Crnozrna, Rumska Crvenka i Stara Banatka bile su odabrane sorte kao najpogodnije za mlevenje, radi kvantitativnog određivanja sadržaja Fe i Zn u dobijenim frakcijama. Mlevenje je izvršeno na laboratorijskom mlinu da bi se dobilo šest proizvoda mlevanja i dva nusproizvoda, a sadržaj Fe i Zn određen je atomskim apsorpcionim spektrometrom sa grafitnom kivetom. Namešavanjem šest proizvoda mlevenja svake sorte dobijene su tri različite vrste brašna. Najveći sadržaj pepela određen je za brašno tip „1100“, dobijeno iz sorte Stare Banatke, koje je takođe imalo najveći sadržaj Fe i Zn (54,9 mg/kg s.m. i 5,407 mg/kg s.m., redom). Konzumiranjem standardne porcije hleba u Srbiji (166 g/dan) dobijene od brašna Stare Banatke bilo bi moguće obezbediti oko 90% preporučenog dnevnog unosa Fe. Stoga, Stara Banatka predstavlja sortu koja bi mogla da bude izvor visokog sadržaja Fe i da se koristi za oplemenjivanje, radi stvranja novih linija pšenice sa visokim sadržajem ovog minerala.

AB  - Ovaj rad predstavlja rezultate sakupljanja lokalnih genetičkih resursa strnih žita u Srbiji u periodu 2020-2021, koje je imalo za cilj dobijanje informacija o trenutnom stanju očuvanja, upravljanja i korišćenja starih sorti i populacija pšenice, ječma, ovsa i raži. Tokom dve godine, prikupljeno je ukupno 12 uzoraka - akcesija, od kojih sedam ječma, dve ovsa, dve raži i jedne pšenice iz četiri regiona Srbije. Gajenje i čuvanje lokalnih populacija i starih sorti strnih žita pretežno je zabeleženo u udaljenim planinskim predelima južnih i jugozapadnih delova Zlatiborskog okruga. Najviše uzoraka prikupljeno je sa planinskih visoravni Peštera, gde lokalni poljoprivredni proizvođači još uvek gaje nekoliko lokalnih populacija i starih sorti na malim površinama za ličnu upotrebu, poput populacija ječma buškat, grbavac i pivac. Ove lokalne sorte su visoko cenjene od proizvođača zbog svojih osobenosti, kao što su otpornost na polegavanje i/ili bolesti, hranljivih vrednosti za ljudsku i stočnu ishranu. Ovi usevi se gaje ili kao pojedinačni usevi ili u mešavini, npr. ječam i pšenica (tzv. polovica), na manje plodnim zemljištima sa minimalnim ulaganjima, što se ogleda u nižim prinosima. Sačuvani su tradicionalni recepti u kojima se koriste lokalne žitarice. Prikupljeni uzorci su opisani, umnoženi, uključeni u poljski ogled i poslati na dugoročno čuvanje u nacionalnu banku gena Republike Srbije i svetski trezor semana na Svalbardu. Svi prikupljeni uzorci su umnoženi radi morfološke karakterizacije. Takođe, ovi genetiči resursi su podeljeni drugim  proizvođačima i lokalnim bankama semena kako bi ocenili podobnost starih sorti i populacija u različitim agroekoloških uslovima, i podstikli razmenu i čuvanje semena među poljoprivrednicima. Prikupljeni genetički resursi imaju značajnu vrednost za aktivnosti predoplemenjivanja i proučavanja genetičke raznovrsnosti.
AB  - This study presents the outcomes of a two-year collection mission conducted in Serbia during the period of 2020-2021. The mission aimed to gather genetic resources of small grains and obtain information regarding their conservation, management, and utilization. A total of 12 samples were collected, comprising seven accessions of barley landraces, two of oats, two of rye, and one variety of wheat from four regions in Serbia. The preservation of local traditional cereals was predominantly observed in remote and mountainous areas of the southern and southwestern parts of the Zlatibor district. Most samples were collected from the Pester mountain plateaus, where local farmers still cultivate a few traditional varieties on small plots for personal use. These local varieties are highly esteemed by farmers due to various attributes, such as resistance to lodging and diseases, nutritional value for both human consumption and animal feed. The cultivation of these crops occurs either as sole crops or in crop mixtures, on less fertile soils with minimal inputs, resulting in modest yields. Traditional recipes using local cereals have been preserved. The collected accessions were described and stored for the long term in the Serbian National Gene Bank and the Svalbard Global Seed Vault. All collected samples were multiplied for morphological characterization through field trials and distributed to farmers for on-farm evaluations. There have been recent initiatives to establish local community seed banks and encourage seed exchange among farmers. The gathered genetic resources hold significant value for pre-breeding activities and genetic diversity studies.

AB  - Pšenica (Triticum spp.) je jedna od najadaptabilnijih biljnih vrsta, zbog sposobnosti da se prilagodi variranju uslova spoljne sredine. Međutim, visoke temperature, količina i raspored padavina tokom rasta i razvića biljke i nalivanja zrna utiču na fiziološko-biohemijske procese, a time i na kvalitet zrna pšenice. Visoka tehnologija gajenja poljoprivrednih useva smanjuje negativan uticaj meteoroloških uslova. Sa druge strane, tehnološki razvoj i intenzivirana poljoprivredna proizvodnja uzrokuju globalne klimatske promene. Cilj ovog rada bio je da se analizira uticaj abiotskih faktora (minimalna, maksimalna i srednja temperatura vazduha i suma padavina) na kvalitet zrna ozime pšenice. Analizirano je dvadeset sorti ozime pšenice, domaćeg i stranog porekla, tokom dve vegetacione sezone (2021/2022 i 2022/2023) Istraživanja su izvedena na oglednom polju (Rimski šančevi) i u laboratoriji Instituta za ratarstvo i povrtarstvo, Novi Sad, Srbija.
AB  - Wheat (Triticum spp.) is one of the most adaptable crop species due to its ability to adjust to the variations of the environmental factors. However, high temperatures, precipitation quantity and distribution during plant development and grain filling affect biochemical processes and consequently grain quality. Advanced technology in growing agricultural crops decreases the negative impact of meteorological conditions. On the other hand, increased technological development and intensified agricultural production cause global climate change. The aim of this study was to analyze the effect of abiotic factors (minimum, maximum and optimum average temperature and precipitation sum) on the quality of winter wheat grain. Twenty national and international winter wheat cultivars were analyzed in two growing seasons. The trial was carried out on the experimental fields and in laboratories of the Institute of Field and Vegetable Crops.

AB  - Usled napretka u oplemenjivanju kao i u samoj biljnoj proizvodnji, prinos zrna pšenice je više nego udvostručen tokom poslednjih nekoliko decenija u Jugoistočnoj Evropi kao i u Republici Srbiji. Takođe, ranija istraživanja su ustanovila vezu između dinamike starenja i glavnih komponenti prinosa zrna i drugih agronomskih osobina kod pšenice. Ubrzanjem starenja biljke skraćuje se period nalivanja zrna što može imati negativan uticaj na konačnu masu zrna ukoliko su mehanizmi za eksploatisanje resursa stečenih u fotosintetskom periodu nedostupni. Zbog navedenog, stay-green fenotip pšenice bi mogao da bude jedan od ciljeva u oplemenjivanju, budući da je duže trajanje zelene lisne površine povezano sa mehanizmima i osobinama koje ublažavaju negativan uticaj spoljne sredine tokom perioda nalivanja zrna. U cilju utvrđivanja varijabilnosti stay-green osobina tokom više godina kontinuirano su praćeni različiti vegetacioni indeksi kod istorijskog seta sorti pšenice.
AB  - Due to the progress in both plant breeding and crop production, over the last few decades wheat grain yield has more than doubled in southeastern Europe, as in the Republic of Serbia. Also, earlier studies have reported the relationship between senescence dynamics and grain yield main components, along with other agronomic wheat traits. Acceleration of plant senescence reduces the duration of grain filling, and may have a negative impact on the final grain weight if the mechanisms to exploit the resources gained during the photosynthetic period are unavailable. Therefore, a stay-green phenotype could be one of the breeding aims, since the longer duration of green leaf area is related to mechanisms and traits that alleviate negative environmental effects during the grain filling. In order to determine the variability of stay-green traits, over several years, various vegetative indexes were continuously monitored in a historical set of wheat cultivars.

AB  - Sorte dvoredog pivskog ječma se u Institutu za ratarstvo i povrtarstvo u Novom Sadu stvaraju u kontinuitetu više od 70 godina. Tokom dugogodišnjeg rada na selekciji i oplemenjivanju cilj je bio razvoj novih sorti sa poboljšanim karakteristikama koje će obezbediti visok potencijal za prinos i zadovoljiti kriterijume kvaliteta za industriju slada. Cilj ovoga rada bio je da se ispitaju sorte dvoredog ječma stvorene u Institutu za ratarstvo i povrtarstvo i registrovane u poslednjih pet godina i 4 sorte stranih kompanija koje se nalaze u komercijalnoj proizvodnji u Srbiji za potrebe industrije slada. Genotipovi su imali dvorede i šestorede tipove klasa i pripadali su ozimim i jarim formama. Ispitivano je 9 sorti ječma u 2019/20. godini i 10 sorti u 2020/21. godini na 3 lokaliteta: Rimski šančevi, Sombor i Kikinda. Ogled je postavljen po slučajnom blok dizajnu na 10 m2 u četiri ponavljanja uz primenu standardne agrotehnike.
AB  - The breeding of varieties of two-row barley has been continuously applied at the Institute of Field and Vegetable Crops in Novi Sad for more than 70 years. The goal during these years of research and improvement was to develop new varieties with enhanced traits to achieve maximum yields and meet quality standards for the malt industry. The study examined two-row barley varieties created at the Institute and registered in the past five years, along with four varieties from foreign companies used in commercial production in Serbia for the malt industry. The genotypes varied in spike types, including two-row and six-row, and belonged to either winter or spring forms depending on the sowing time. The research involved testing nine barley varieties in the 2019/20 season and ten varieties in the 2020/21 season at three different locations: Rimski šančevi, Kikinda, and Sombor. The trial was conducted using a randomized block design with 10 m2 plots and four replications, employing standard agronomic practices.

Ispitivano je 9 sorti ječma u 2019/20. godini i 10 sorti u 2020/21. godini na 3 lokaliteta: Rimski šančevi, Sombor i Kikinda. Ogled je postavljen po slučajnom blok dizajnu na 10 m2 u četiri ponavljanja uz primenu standardne agrotehnike., The breeding of varieties of two-row barley has been continuously applied at the Institute of Field and Vegetable Crops in Novi Sad for more than 70 years. The goal during these years of research and improvement was to develop new varieties with enhanced traits to achieve maximum yields and meet quality standards for the malt industry. The study examined two-row barley varieties created at the Institute and registered in the past five years, along with four varieties from foreign companies used in commercial production in Serbia for the malt industry. The genotypes varied in spike types, including two-row and six-row, and belonged to either winter or spring forms depending on the sowing time. The research involved testing nine barley varieties in the 2019/20 season and ten varieties in the 2020/21 season at three different locations: Rimski šančevi, Kikinda, and Sombor. The trial was conducted using a randomized block design with 10 m2 plots and four replications, employing standard agronomic practices.",

AB  - In modern society, it has become necessary that every food product possess nutritional label. One part of the nutritional 
value of food is micronutrients, especially minerals. They can be determined by different analytical techniques such as 
inductively coupled flame atomic absorption spectroscopy (FAAS), graphite furnace atomic absorption spectrometry 
(GFAAS), plasma-optical emission spectroscopy (ICP-OES) and inductively coupled plasma-mass-spectrometry (ICP MS). These techniques differ according to the number of elements that can be determined, the levels of determination, 
the number of samples that can be determined and the sample volume. Wheat contain substantial share of minerals iron 
(Fe) and Zinc (Zn). A lot of human population especially woman and children’s in poor countries suffers from deficient 
of these micronutrients. Therefore is necessary to measure their content in wheat and wheat products such as different 
kinds of bread that are staple food. Therefore, the aim of the study was to determine Fe and Zn in wheat grain and milling 
streams by GFAAS and ICP-OES to compare them.
AB  - U savremenom društvu postalo je neophodno da svaki prehrambeni proizvod ima nutritivnu oznaku. Jedan deo nutritivne 
vrednosti hrane čine mikronutrijenti, a pogotovo minerali. Oni se mogu odrediti različitim analitičkim tehnikama kao što 
je induktivno spregnuta plamena atomska apsorpciona spektroskopija (FAAS), atomska apsorpciona spektrometrija sa 
razaranjem uzorka u grafitnoj peći (GFAAS), plazma-optička emisiona spektroskopija (ICP-OES) i induktivno spregnuta 
plazma-masena spektrometrija (ICP-MS). Ove tehnike se razlikuju prema broju elemenata koje mogu odrediti, 
koncentraciji uzorka i broju uzoraka koji se mogu odrediti kao i zapremini uzorka koja je potrebna za analizu. Pšenica 
sadrži značajan udeo minerala gvožđa (Fe) i cinka (Zn). Veliki broj lјudi, posebno žena i dece u siromašnim zemlјama, 
pati od nedostatka ovih mikronutrijenata. Zbog toga je neophodno odrediti sadržaj ovih minerala u pšenici i pšeničnim 
proizvodima kao što su različite vrste hleba koji su osnovna hrana. Stoga je cilј studije bio da se pomoću GFAAS i ICP OES odredi sadržaj Fe i Zn u zrnu pšenice i proizvodima mlevenja kako bi se mogli uporediti rezultati dobijeni pomoću 
ove dve tehnike.

AB  - Najvažniji ozimi usevi u Srbiji, kao i u drugim zemlјama regiona, pšenica i ječam su u protekloj sezoni bili zasejani na oko 720.000 ha. Njihov značaj za poljoprivrednu proizvodnju naše zemlje potvrđuje i činjenica da su zasejane površine strnih žita bile veće za 3,5% u odnosu na prethodnu godinu. Iako je proizvodnu sezonu 2021/22. pratilo variranje vremenskih činilaca uz topao jesenji period, blagu zimu, deficit padavina u prolećnom delu vegetaćije i povišene temperature u završnim fazama sazrevanja zrna, novosadske sorte strnih žita ponovo su ostvarile visoke prinose zrna, što je uz odličan tehnološki kvalitet dodatno potvrdilo vodeću poziciju sortimenta Instituta za ratarstvo i povrtarstvo.

AB  - For thousands of years, cereal grains have been a primary source for the nutrition of the human population and during the period after major crops’ domestication, agriculture radically transformed human societies worldwide. The most important cereal species in agriculture are maize, rice, wheat, triticale, rye, barley, oats, sorghum, and millets, with a total yield of more than 2750 million tonnes (FAOSTAT, 2021). For the majority of the population, cereal crops remain the major source of calories. In developing countries, cereals provide about 60% of the calories, while in the poorest countries cereal parts in daily calories uptake reach more than 80% (Awika, 2011). On the other hand, in the developed world, approximately 30% of the calories come directly from cereals. Moreover, cereals are essential for animal feed in about 36% of world consumption and industrial.
