AB  - Hybridization of sunflower seeds went in the direction of increasing the oil content of the seeds as a major technological requirement. Today, oily sunflower hybrid seed contain over 40% of the oil. There are two ways of oil extraction: chemically using solvents or mechanically using presses. The oil yield is higher during solvent extraction, however, such oil requires further refining. A lower oil yield is obtained by extracting the oil by pressing but this oil requires minimal additional treatment. Oil yield obtained by pressing on the screw press is influenced by the characteristics of the seed (eg oil content, moisture, hull content, impurity content, etc.) and screw press characteristics.

AB  - Sunflower seed hybridization is aimed at increasing the oil content of the seed as a basic technological requirement. Sunflower hybrids with high oil content (over 40%) are known as oily hybrids.  ese hybrids are characterized by black seeds, with a thin hull, with no significant variations in dimensions. On the other hand, the potential of sunflower protein has been increasingly recognized lately, and sunflower hybrids with increased protein content, non-oily (confectionary) sunflower hybrid seeds are being created. Confectionary hybrids are characterized by larger seeds with a thicker, most commonly black and white stripes hull. In this paper, the geometric characteristics of two oily and two non-oily sunflower hybrid seeds were analized and compared. Geometric characteristics were determined using a vernier caliper per 100 individual seeds with an accuracy of 0.05 mm.

AB  - Proizvodnja ulja postupkom hladnog presovanja pomoću pužnih presa je jedan od najstarijih načina izdvajanja ulja pri čemu je uticaj načina izdvajanja na kvalitet dobijenog ulja minimalan. Za dobijanje ulja uglavnom se koriste hibridi suncokreta sa većim sadržajem ulja u semenu (preko 40%), poznati kao uljani hibridi, međutim na tržištu postaju sve zastupljeniji i konzumni hibridi suncokreta koji imaju manji sadržaj ulja (oko 30%), a veći sadržaj proteina. Ovi hibridi uglavnom se koriste za direktnu konzumaciju, kao i u proizvodnji pekarskih i konditorskih proizvoda, međutim sadržaj ulja u ovim hibridima je čak veći u poređenju sa drugim uljaricama (npr. soji koja sadrži oko 20% ulja u semenu). U ovom radu ispitana je mogućnost primene konzumnih hibrida suncokreta u svrhu dobijanja hladno presovanog ulja. Semena tri najnovija konzumna hibrida suncokreta, kao i seme jednog uljanog hibrida presovana su pri istim uslovima i ispitano je iskorišćenje i kapacitet presovanja. Na osnovu dobijenih rezultata zaključeno je da potencijal za proizvodnju hladno presovanih ulja od semena konzumnih hibrida postoji, međutim potrebno je izvršiti optimizaciju procesa.
AB  - Oil production by cold pressing on a screw press is one of the oldest methods of oil separation, where the impact of the production method on the oil quality is minimal. Sunflower hybrids with a higher seed oil content (over 40%), known as oily hybrids, are mainly used for oil production, however, sunflower hybrids with a lower oil content (about 30%) and higher protein content are becoming more common on the market. These (confectionary) hybrids are mainly used for direct consumption and the confectionery industry, however the oil content in these hybrids is even higher compared to other oilseeds (e.g. soybeans containing about 20% seed oil). In this paper, the possibility of using confectionary sunflower hybrids for cold-pressed oil production was investigated. The seeds of the three newest confectionary sunflower hybrids, as well as one oily hybrid were pressed under the same conditions and the yields and pressing capacity were tested. Based on the obtained results, it was concluded that the potential for the cold-pressed oil production from the confectionary hybrid seeds exists, however, it is necessary to optimize the process.

Evaluation of oxidative stability of new cold-pressed sunflower oils during accelerated thermal stability tests

AB  - Refined sunflower oil has dissimilar shelf life compared to cold-pressed sunflower oil, which increases the use of refined oil, and it is more abundant in the diet. On the other hand, the production of cold-pressed oils does not require chemical processing. Moreover, these oils contain significant amounts of bioactive components with a beneficial health effect. Breeders are trying to create new sunflower hybrids for the production of cold-pressed oil with improved oxidative characteristics. This study aims to examine the rancidity of 24 cold-pressed sunflower oils of new hybrids under accelerated thermal stability test conditions (Rancimat and Schaal oven tests) and to compare the obtained results with refined sunflower oil. According to investigated oxidative parameters, the most similar to refined sunflower oil was the H20 sample with the induction period determined by the Rancimat test of 9.55 ± 0.00 h, compared to 9.49 ± 0.00 h, obtained in refined sunflower oil. The total oxidation value of the H20 sample amounted to 3.26 ± 0.12, while in refined sunflower oil this value was 2.12 ± 1.73.

Confectionery sunflower in Serbia

AB  - Serbia is one of the leading countries in the Balkans both in production and breeding of high-protein confectionery sunflower, although the area under this crop in Serbia is rather small. The use of NS confectionery sunflower hybrids in production, the processing industry and smaller factories has increased. Large seed fractions are purchased, roasted and packed individually, while smaller seed fractions are used in the production of cold-pressed sunflower seed oil and oil cake. It is expected that NS confectionery hybrids will continue to increase in production and gradually replace other varieties. A confectionery sunflower breeding program has been established at IFVCNS in mid-90s with the aim of developing modern confectionery open-pollinated hybrids. The increased use of plant proteins in the food industry imposed new goals on breeding programs. Hence, the confectionary sunflower breeding program places special emphasis on creating hybrids that fit their intended market segment. This can relate to purpose and intended use – whether food or bird feed – or different production conditions – classical or organic production. The hybrids created in NS breeding programs enable the use of intensive cultivation practices and mechanized harvesting and provide a stable seed and protein yield.

AB  - Vegetable oils have different sensory, physico-chemical and nutritive characteristics and shelf life, which is why the use of only one vegetable oil in diet is often not sufficient. Oil blending represents a very simple way to employ various characteristic properties of a large number of vegetable oils and is also an economical way to change sensory, physicochemical and nutritive characteristics and improve oxidative stability. Blending of various vegetable oils can change the fatty acid compositions and provide a higher content and different composition of natural antioxidants and bioactive lipids, thereby improving the nutritive value and stability, i.e. shelf life of the obtained oil. Sunflower oil is one of the top five edible oils in the world, having a full priority in Serbia, due to the high availability of raw materials over others. Due to the presence of essential linoleic (omega 6) fatty acid and alpha-tocopherol (vitamin E), it has a high nutritive value, while due to its extremely good nutritive characteristics and the presence of bioactive components, such as essential alpha-linolenic (omega 3) fatty acid, flaxseed oil has been increasingly used in the diet in recent years. The aim of this paper is to determine the possibility of applying a gas chromatography device with a mass spectrometric detector (GC-MS) coupled to a newly developed mathematical model to determine the proportion of individual oils in blended oils. Nine blended oils with different proportions (0-100% w/w) of refined sunflower oil and cold pressed flaxseed oil, as well as pure refined sunflower oil and cold pressed flaxseed oil, were prepared and analyzed by GC-MS._The peaks of the molecular ions of specific fatty acids were integrated. Based on the surface areas of these peaks, a novel mathematical model was developed to determine the proportion of individual oils in the blends. All obtained experimental values are consistent with the actual mass fractions of individual oils in the oil blends. Very high correlation coefficient of 0.9964 between experimentally determined and actual proportions of individual oils in blends is an indicator of the applicability of the developed method presented in this work.

AB  - Most vegetable oils obtained by cold pressing are yellow or yellowish-brown, with red or green tone. The color of the oil is a consequence of the presence of colored macromolecules (pigments).  The most common natural pigments in the oils are carotenoids (yellow) and chlorophylls, green color pigments. The color is also affected by the content of various non-glyceride ingredients present in the oils, but also by various products formed during the inadequate management of the technological process. The aim of this study was to examine the content of the most abundant pigments (total carotenoids and total chlorophylls) in sunflower oil obtained by cold pressing of three confectionary (non-oily) sunflower hybrids (NS-H-6318, NS-H-6307 and NS-H-6308), as well as to determine their influence on instrumentally determined color parameters (CIE L*a *b* system and transparency). Negative a* values noticed in examined samples indicate presence of green pigments in examined oils.

AB  - Uljane hibride suncokreta karakteriše crno seme, sa tankom ljuskom koja predstavlja 20-25% ukupne mase semena. Uglavnom su bez većih odstupanja u dimenzijama i obliku. Sadržaj ulja u semenima uljanih hibrida je i preko 40%. Cilj ovog rada je da se ispitaju i uporede dimenzije semena istih uljanih hibrida koji su uzgajani na teritoriji Republike Srbije i Argentine. Najveća prosečna vrednost dužine od 11,13 mm određena je kod semena hibrida NS Ronin uzgajanog u Srbiji i semena hibrida Duško uzgajanog u Argentini. 45,17% ispitanih semena imalo je dužinu između 10 i 10,99 mm, 42,83% širinu u intervalu od 5 do 5,99 mm, a debljina 47,00% ispitanih semena bila je u opsegu od 3 do 3,99 mm.
AB  - Sunflower oil hybrids usually have black seed with a thin hull representing 20-25% of the total seed mass. They generally don't have major deviations in dimensions and shape of seeds. Oil content in the seeds are over 40%. The aim of this study was to investigate and compare seed dimensions of the same oil hybrids grown in Serbia and Argentina. The highest average length of 11.13 mm was determineted for sample NS Ronin grown in Serbia and sample Dusko grown in Argentina. 45.17% of investigated seeds had length between 10.00 and 10.99 mm, 42.83% had width in range of 5.00 to 5.99 mm, and the thickness of 47.00% of seeds was between 3 and 3.99 mm.

abstract = "Uljane hibride suncokreta karakteriše crno seme, sa tankom ljuskom koja predstavlja 20-25% ukupne mase semena. Uglavnom su bez većih odstupanja u dimenzijama i obliku. Sadržaj ulja u semenima uljanih hibrida je i preko 40%. Cilj ovog rada je da se ispitaju i uporede dimenzije semena istih uljanih hibrida koji su uzgajani na teritoriji Republike Srbije i Argentine. Najveća prosečna vrednost dužine od 11,13 mm određena je kod semena hibrida NS Ronin uzgajanog u Srbiji i semena hibrida Duško uzgajanog u Argentini. 45,17% ispitanih semena imalo je dužinu između 10 i 10,99 mm, 42,83% širinu u intervalu od 5 do 5,99 mm, a debljina 47,00% ispitanih semena bila je u opsegu od 3 do 3,99 mm., Sunflower oil hybrids usually have black seed with a thin hull representing 20-25% of the total seed mass. They generally don't have major deviations in dimensions and shape of seeds. Oil content in the seeds are over 40%. The aim of this study was to investigate and compare seed dimensions of the same oil hybrids grown in Serbia and Argentina. The highest average length of 11.13 mm was determineted for sample NS Ronin grown in Serbia and sample Dusko grown in Argentina. 45.17% of investigated seeds had length between 10.00 and 10.99 mm, 42.83% had width in range of 5.00 to 5.99 mm, and the thickness of 47.00% of seeds was between 3 and 3.99 mm.",

AB  - The confectionary/non-oil seed of sunflower hybrids is characterized by a higher content of the hull, which is thicker than the oil seed hybrids of sunflower. These seeds can be of different size and shape, with a hull not completely black. The aim of this study is to examine the dimensions of confectionary seeds of the latest NS sunflower hybrids. The results of the analyzed seed samples of the latest hybrids of second filial (F2) generation (NS-H-6792, NS-H-6489, NS-H-6311) are compared with the results of already-used hybrid seeds (Cepko). Equivalent diameter and linear dimensions of seed are characterized by Malik and Saini, 2016. The highest specific value of the equivalent diameter was 8.25±0.60 mm (NS-H-6792) and the smallest was 7.90±0.30 mm (NS-H-6311). Only 24.33% of the measured seeds were between 15.00 and 15.99 mm long, which is the most frequent length interval. The average seed width is from 7.00 to 7.99 mm (44.33%), while the average seed thickness is from 4 to 4.99 mm, which was measured in 46.67% of examined seeds. From the above results of the linear dimensions it can be concluded that the seeds are the most different in length, while the distribution of the results by width and thickness is less.

AB  - Because of the favorable amino acid composition of sunflower protein and low content of antinutritive components, the confectionary/non-oil sunflower seed is increasingly gaining in importance. This is why there is a need for increasing the number of this type of hybrids. Breeding new hybrids of different characteristics are obtained. In order to investigate the composition of the seed, three samples of the latest NS hybrids of second filial (F2) generation (NS-H-6792, NS-H-6489, NS-H-6311) were analyzed and compared with the results of the hybrid seed already-used (Cepko). The content of moisture was determined according to SRPS EN ISO 665, 2008, the content of the oil according to SRPS EN ISO 659, 2011, while the mass of 1000 seeds and the content of hull and kernels were made according to Karlović & Andrić, 1996. The moisture content ranged from 5.75±0.00% in the sample NS-H-6792 to 6.57±0.03%, in the sample NS-H-6489. The oil content was in the range of 25.62±0.22%, found in the sample NS-H-6311 to 23.12±0.16%, found in the sample NS-H 6489. The highest content of the hull was found in the NS-H-6792 sample, 46.74±0.80%, while the smallest content of the hull was found in the sample NS-H-6311 and amounted to 41.91±0.71%.

AB  - Vegetable oils rich in antioxidant are of great interest in the food industry as they decelerate oxidative degeneration of lipids and therefore promote the quality as well as the nutritional value of food. Sunflower (Helianthus annuus L.) is one of the most abundant annual crops in the world that is grown for edible oil which is a good source of bioactive compounds. Tocopherols belong to the most important bioactive compounds in oil which have many health benefits for human. These compounds preserve oil from peroxidation by scavenging lipid peroxyl radicals. In humans, tocopherols play an important role as vitamin E, contributing to maintaining the immune system and delaying the pathogenesis of a variety of degenerative diseases. Over the last few years, increased interest for natural antioxidant in cold‐pressed plant oils has been observed since they have better nutritive properties in comparison with refined ones. In this work, three cold-pressed sunflower oils obtained from sunflower hybrids cultivated in Serbia (2017 harvest) were studied for their contents. Quantification of tocopherols was carried out using high performance liquid chromatography on a column Nucleosil 100-5 NH2 with fluorescence detection (λex=280 nm, λem=340 nm). The mobile phase was n-hexane/ethyl acetate (70/30%v/v) with a flow rate of 1 ml/min. The relative retention value and maximum values of absorption at the given relative retention time were used to identify and confirm the presence of tocopherolsin injection volume of 20 μl solution samples obtained by diluting of oil (300 µL) in n-hexane (2 ml). This research verified the dominant presence of α-tocopherol in cold-pressed sunflower oils. The content of α-tocopherol ranged between 497.40 mg/kg oil in NS Oliva hybrid and 691.46 mg/kg oil in NS Romeohybrid. The results have shown that there were differences in content of tocopherols among tested hybrids, indicating the great genetic potential for improvement.

Quality and technical-technological characteristics of seed of oleic-type sunflower

AB  - The quality and technical-technological characteristics of oleic type sunflower seed grown at four localities were analyzed and compared with seed of domestic hybrids of linoleic type, from mss production. The basic quality parameters were determined: oil and protein content, fatty acid composition and total tocopherols content, as well as the most important characteristics which affect the quality of separated crude oil: free fatty acids and peroxide value. Besides standard (usual) technical-technological characteristics of seed, like liter and specific mass, mass of 100 grains portion of hull and kernel etc, the hull hygroscopicity was investigated and seed dimensions were determined. The obtained results have shown that the oleic sunflowerseed hybrid - Olivko - has a high content of oleic acid, about 80%, oil content (on dry matter) is over 50%, and the protein content of the seed is about 22%. According to acidity and oxidative state, the seed is of very good quality and can be used for the obtaining of cold pressed oil. However, the seed is quite small, the hull is rather thin and there are certain differences in hull hygroscopicity. The different localities had no significant influence on the mentioned quality characteristics.
AB  - U radu je analiziran kvalitet i tehničko-tehnološke karakteristike semena oleinskog suncokreta gajenog na četiri lokaliteta u odnosu na seme linolnog tipa domaćih hibrida iz masovne proizvodnje. U uzorcima su određeni osnovni pokazatelji kvaliteta: sadržaj ulja i proteina, zatim sastav masnih kiselina i sadržaj ukupnih tokoferola, kao i najbitniji pokazatelji koji neposredno uslovljavaju kvalitet izdvojenog sirovog ulja: slobodne masne kiseline i peroksidni broj. Osim standardnih tehničko-tehnoloških karakteristika semena kao što su: litarska i specifična masa, masa 1000 zrna, udeo ljuske i jezgra itd. ispitana je higroskopnost ljuske i određene su dimenzije semena. Dobijeni rezultati su pokazali da oleinski hibrid suncokreta – Olivko – ima visok sadržaj oleinske kiseline, oko 80%, sadržaj ulja na suvu materiju je preko 50%, a sadržaj proteina u semenu je oko 22%. Prema kiselosti i oksidativnom stanju seme je veoma dobrog kvaliteta za dobijanje hladno ceđenog ulja. Međutim, seme je dosta sitno, ljuska je prilično tanka i postoje određene razlike u higroskopnosti ljuske. Različiti lokaliteti uzgoja nisu značajno uticali na navedene pokazatelje kvaliteta semena.

abstract = "The quality and technical-technological characteristics of oleic type sunflower seed grown at four localities were analyzed and compared with seed of domestic hybrids of linoleic type, from mss production. The basic quality parameters were determined: oil and protein content, fatty acid composition and total tocopherols content, as well as the most important characteristics which affect the quality of separated crude oil: free fatty acids and peroxide value. Besides standard (usual) technical-technological characteristics of seed, like liter and specific mass, mass of 100 grains portion of hull and kernel etc, the hull hygroscopicity was investigated and seed dimensions were determined. The obtained results have shown that the oleic sunflowerseed hybrid - Olivko - has a high content of oleic acid, about 80%, oil content (on dry matter) is over 50%, and the protein content of the seed is about 22%. According to acidity and oxidative state, the seed is of very good quality and can be used for the obtaining of cold pressed oil. However, the seed is quite small, the hull is rather thin and there are certain differences in hull hygroscopicity. The different localities had no significant influence on the mentioned quality characteristics., U radu je analiziran kvalitet i tehničko-tehnološke karakteristike semena oleinskog suncokreta gajenog na četiri lokaliteta u odnosu na seme linolnog tipa domaćih hibrida iz masovne proizvodnje. U uzorcima su određeni osnovni pokazatelji kvaliteta: sadržaj ulja i proteina, zatim sastav masnih kiselina i sadržaj ukupnih tokoferola, kao i najbitniji pokazatelji koji neposredno uslovljavaju kvalitet izdvojenog sirovog ulja: slobodne masne kiseline i peroksidni broj. Osim standardnih tehničko-tehnoloških karakteristika semena kao što su: litarska i specifična masa, masa 1000 zrna, udeo ljuske i jezgra itd. ispitana je higroskopnost ljuske i određene su dimenzije semena. Dobijeni rezultati su pokazali da oleinski hibrid suncokreta – Olivko – ima visok sadržaj oleinske kiseline, oko 80%, sadržaj ulja na suvu materiju je preko 50%, a sadržaj proteina u semenu je oko 22%. Prema kiselosti i oksidativnom stanju seme je veoma dobrog kvaliteta za dobijanje hladno ceđenog ulja. Međutim, seme je dosta sitno, ljuska je prilično tanka i postoje određene razlike u higroskopnosti ljuske. Različiti lokaliteti uzgoja nisu značajno uticali na navedene pokazatelje kvaliteta semena.",
