AB - Whole kernels of cereals are the most important source of magnesium. This mineral has several positive effects on human health. However, the human body cannot absorb 100% of magnesium from plant sources during digestion. Additionally, the wheat flour milling process usually produces refined flour with a substantially lower content of magnesium. The aim of this study was to examine the effect of milling of two wheat cultivars on total and soluble magnesium distribution in milling fractions, with the purpose of creating wheat bread with a precisely defined magnesium content. Ash content, thousand grain weight (TGW), and kernel size were analysed in five wheat cultivars. Two most statistically distinguished wheat cultivars according to these analyses (Moma and Todorka) were milled in a laboratory mill to gain as many flour frac-tions as possible (eleven). Magnesium was extracted from the flour and its content was measured by inductively coupled plasma. The results showed that the level of soluble magnesium in refined white flours (T-500 with ash content between 0.46-0.60d. m.%) is approximately 17% and is available for uptake in the human body. Also, by milling the Moma cultivar in an industrial mill with a capacity of 100 t per day gave 6.6 t more brown flour (T-1000 with ash content between 1.05-1.15 d.m.%) than the Todorka cultivar. Furthermore, the daily consumption of brown bread (produced from brown flour) in Serbia would satisfy about 60% of the daily magnesium requirements.

AB - Wheat bran is a rich source of dietary fibres, some of essential fatty acids and contains important quantities of starch, protein, vitamins, minerals and phytic acid. It is also well known for its powerful anticarcinogenic and antioxidant properties. Field experiments with a collection of 23 wheat genotypes were conducted during two growing seasons in order to evaluate the effects of genotype (G), growing environment (E) and their interaction (G x E) on the nutrient composition of wheat bran. The samples of the bran portion of wheat grain were obtained as by-products of milling on the MLU 202 laboratory flour mill. Oil content was obtained by exhaustively extracting samples in a soxhlet apparatus using petroleum ether as the extractant. Tocopherols were determined by using extraction with hexane and normal-phase high- performance liquid chromatography with detection in fluorescent region. The mobile phase consisted a mixture of hexane:ethy] acetate (70:30, v/v). The results have shown that all sources of variation significantly affected chemical composition of wheat bran fraction. Total oil contents of wheat bran varied between 3.03-5.37% in the first and between 2.68-4.96% in the second growing season for investigated genotypes. Gas chromatography analyses of wheat bran oil showed major fatty acids to be linoleic, oleic and linolenic acids with wider range of variation expressed in the second growing season. Total tocopherols content in wheat bran extracts ranged from 16.3 to 77.6 mg/kg in the first and from 28.08 to 107.49 mg/kg in the second growing season. Significant differences in oil content and its chemical composition were found among the genotypes, indicating the great genetic potential for improvement. Also, the effect of the environment on all investigated compounds was highly significant, indicating the possibility to produce wheat with high levels of selected health components and antioxidant activities in a specific growing environment.

AB - The objectives of this study were to investigate: (1) the effects of genotype, environment, and their interactions on the oil content (OC), protein content (PC) and grain yield (GY) of 25 varieties of winter wheat, (2) the correlations among these traits in different environments, and (3) the effects of different climatic variables and their interactions with wheat genotypes for the examined traits. The field experiments were performed on three experimental sites in Serbia in 2009/10 and 2010/11. The most variable traits were GY and PC, while the variations of OC were lower. A significant positive correlation between wheat bran OC and GY was found in one, while highly significant negative correlations between PC and GY were found in three out of six environments. The partial least square regression (PLSR) triplots for protein content, oil content and grain yield enabled us to identify favorable and limiting climatic conditions for each trait and explained 31.9%, 32.6%, and 30.4% of the total variance, respectively. Cvs. Renesansa and Zvezdana were identified as genotypes with high average values for all traits, while cvs. Bankuty 1205 and Banatka were identified as potential sources of high protein content.

AB - The aim of the study was to examine how a slight modification of the standard bread-making procedure for the evaluation of wheat cultivars affects bread making properties of different quality samples, without α-amylase activity. For that purpose, two wheat cultivars of different quality (Zvezdana and NS 40S) were examined from four different localities without diastatic activity. Standard physicochemical and rheological parameters for wheat cultivars evaluation were analysed on the eight samples. Also, bread made from flour of these samples was produced according to the standard bread-making procedure for evaluation wheat cultivars and with addition of sugar and malt according to a modified procedure. The results showed that a slight modification of the standard breadmaking procedure can affect the most important properties of bread (bread volume and bread crumb quality). The average values of both parameters were statistically higher. Additionally, statistical analyses showed that bread volume of both cultivars of differing quality was statistically higher, whereas only Zvezdana had statistically higher bread crumb quality.

abstract = "The aim of the study was to examine how a slight modification of the standard bread-making procedure for the evaluation of wheat cultivars affects bread making properties of different quality samples, without α-amylase activity. Additionally, statistical analyses showed that bread volume of both cultivars of differing quality was statistically higher, whereas only Zvezdana had statistically higher bread crumb quality., Clij ovog istraživanja je bio da se ispita kako neznatna modifikacija standardne metode probnog pečenja kojom se ocenjuje pecivost i mešavinska vrednost sorti pšenice utiče na osobine hleba sorti pšenice različitog kvaliteta, u kojima nije izražena αamilazna aktivnosti.

AB - The aim of this study was to improve understanding of (1) the effect of genotypic and environmental factors on pre-anthesis development and leaf appearance traits of barley and wheat; (2) the relationship of these factors with grain yield, and (3) the differences between these two crops across different environments/sowing dates. Therefore, trials with six two-row winter barley and six winter wheat cultivars were carried out in two successive growing seasons on four sowing dates. Our study showed that the observed traits varied between species, cultivars and sowing dates. In both growing seasons, biomass at anthesis and grain yield declined almost linearly by delaying the sowing date. There was no clear advantage in grain yield of wheat over barley under conditions of later sowing dates. Generally, barley produced more leaf and had shorter phyllochron than wheat. Both wheat and barley showed a similar relationship between grain yield and different pre-anthesis traits.

AB - Wheat production has become a global problem due to the climate change impact on wheat farming systems, pest management and control. Yield loss predictions are usually made by using regression models with either biotic or abiotic factors as predictor variables, but only a few of them have considered the combined effects of multiple diseases and climatic conditions. Moreover, efficacy of fungicides in pest control and their effect on yield increase is usually analysed in respect to the level of disease index and yield achieved in untreated plots, without taking into consideration the influence of other environmental elements. This study was conducted in order to determine the combined effects of biotic factors (disease indices) and abiotic factors (climatic elements and efficacy of fungicides) on yield achievements of winter wheat varieties. Field trials were set up under naturally occurring inoculum of the prevalent economic pathogens of wheat in the period 2006-2017. Model varieties Barbee and Durumko, known to have various degrees of susceptibility to wheat pathogens, were used in the study. General linear model function of Minitab 17 (trial version) was used for all the analyses. It was determined that yield loss in untreated plots was significantly influenced by the combined effects of multiple diseases and climatic elements. Moreover, it was determined that the relationship between fungicide efficacy and yield achievements was not straightforward and that it should be analysed in respect to the combined effects of biotic and abiotic factors.

AB - The objective of this study was to analyse genotypic variations of some important wheat quality parameters (protein content – PC, sedimentation value – SD, wet gluten content – WG and dry gluten content – DG) during two growing seasons (2010 and 2011). The trial was conducted at the experimental field of the Institute of Field and Vegetable Crops, Novi Sad, with 25 wheat varieties registered and cultivated in Serbia for the last 60 years. PC, SD and WG were determined by Kjeldahl method, Zeleny sedimentation test and manual method, respectively. Strong year and genotype effects were found for all the quality traits of the studied varieties, while the effect of their interaction was not significant. The protein content of the wheat varieties ranged between 11.2% - 17.8%, with wet and dry gluten contents of 21.2 – 47.9% and 7 – 16%, respectively. Sedimentation value varied from 14 (cv. San Pastore) to 58 ml (cv. Pesma). Total protein content was positively correlated with the wet and dry gluten contents. Also, the correlation analyses have shown that older wheat varieties had higher protein content, as well as wet and dry gluten contents, but lower sedimentation values then modern cultivars. However, it should be noted that significant genotypic variations were found for all the analysed traits and varieties with good quality parameters could be identified among old and new cultivars.

AB - The aim of this study was to analyse the effects of genotype, year, nitrogen (N) fertilizer doses, and their interactions on the protein and oil content in 24 cultivars of winter wheat (Triticum aestivum L.). A two-year field trial was set up on the Rimski šanĉevi site, with two N doses (45 and 110 kgha-1N). The oil was extracted from bran obtained by using the MLU 202 laboratory mill. The classic method of Rushkovsky was used to determine the oil content and ICC 105/2 method to determine the protein content. Significant variability was found among the cultivars for both analysed traits. Protein content ranged from 10.9% (NS 40S) to 17.1% (Banatka), with the average of 13.3% and coefficient of variation (CV) of 3.1%. During the two trial years, at the lower N rate oil content varied from 2.6% (Skopljanka) to 5.2% (Dragana), and at the higher N rate from 2.5% (Pobeda) to 5.4% (Simonida). The average oil content was 3.96%, with CV of 9.2%.

AB - Thousand kernel weight (TKW) is a yield component associated with grain quality. It is reported in the literature that TKW is significantly influenced by varieties, agro-ecological conditions and disease indices, but the influence of their interactions on TKW loss has rarely been taken into consideration. The main objective of this study was to examine the combined effects of multiple diseases and climatic conditions on TKW losses in winter wheat. Leaf rust, powdery mildew, and Septoria tritici blotch were considered biotic predictor variables in regression models explaining TKW losses. Monthly averages of temperature, relative humidity and total rainfall in May and June in the 2006-2013 growing seasons were used as abiotic predictor variables. The results of this study indicated a significant low positive correlation between yield loss and TKW loss in the two varieties. TKW losses were less influenced by leaf rust, powdery mildew, and Septoria tritici blotch than yield losses. The significant influence of the interaction between variety and the environmental conditions on TKW loss was confirmed from the general linear model function. The results of this study indicated that factors influencing yield and yield component losses are part of the complex environment, and the relationship between them should be investigated with respect to their interactions.

Rekombinovanjem i implementiranjem poželjnih gena, novosadske sorte poseduju visok nivo tolerantnosti na abiotičke (suša, visoke i niske temperature, itd.) i biotičke (bolesti i štetočine) stresne faktore.

AB - This study analysed polymorphism of 15 microsatellite loci in the collection comprising of 40 genotypes of bread wheat (Triticum aestivum L.), 32 genotypes belonging to other species within Triticum genus and 3 genotypes from Aegilops genus. The results showed significant differences in the variability of the tested loci in bread wheat and related species. In the collection of bread wheat genotypes, 119 alleles were detected with the average number of 7.9 alleles per locus. In wild and cultivated related species 157 alleles were identified, with the average of 10.5 alleles per locus. All analysed parameters of microsatellite loci variability (PIC value, gene diversity, heterozygosity, etc.) indicated higher level of polymorphism in wild relatives than in the cultivated bread wheat. Analyses of individual genomes indicated that in the bread wheat genetic diversity of the B and D genomes was significantly reduced in relation to the A genome, while the differences in polymorphism between genomes in the wild relatives were significantly lower. The results showed that wild related species can be used as sources for new variability in wheat breeding.

AB - Change of meteorological factors throughout years causes different reactions of wheat genotypes in terms of trait expression. Effects of environmental factors (sum of active temperatures, total precipitation and insolation) on heading time and plant height were analysed in twenty-seven wheat genotypes of different geographical origin from 2009-2013. The selected genotypes were classified into three groups according to the heading time (early, medium early and late), and the height (low, medium or high). Canonical correlation analysis was used to determine the interdependence between environmental factors and wheat phenotypic traits. Within all three groups for plant height, Eigen value of the first canonical factor explained 86.9-98% of the variability, indicating one predominant factor in the expression of this trait. Within the groups for earliness, Eigen value of the first canonical factor explained 64.9-76.3% of the variability, indicating more predominant factors in the expression of this trait.

AB - Grain yield is one of the most important and complex traits in cereal breeding and depends upon a combination of different plant traits. Therefore, an effective breeding program requires a proper understanding of the relationships between grain yield and agronomic traits. The objectives of this study were the evaluation of two-rowed winter malting barley genotypes and the perceiving of relationships among grain yield and their agronomic and quality traits. The trials with 19 two-rowed winter malting barley genotypes were conducted during three years. The relationships among plant lodging, height, thousand kernel weight, hectolitre mass, grain protein content and grain yield, were studied by PCA biplot analysis. The results showed that the influence of year, genotype and genotype by year interaction on barley grain yield were significant. Further, results indicate that two-rowed winter malting barley grain yield can be improved by selecting plants of average plant height with thousand kernel weight above 41.0 g and grain protein content of about 11.0 g 100-1g dm.

AB - In the 2013/14 production year, there was a strong appearance of rust on wheat at several locations in Vojvodina and Serbia. According to symptoms, colors, shapes and sizes of urediospores and teliospores the causal agent of yellow rust Puccinia striiformis f. sp. tritici dominated. The infection intensities ranged from 40 to 60% on some field sites, and at the genetic collection field trials intensities were up to 90%. This pathogen has not been a major issue in the Serbia wheat production, and there is no study of the virulence of its population. There has been report of the emergence of new races of yellow rust in England, France, Spain, Germany, Sweden and Denmark. This pathogen rapidly spreads through the wind and passengers from all over the world and a new race for a very short period of time can pass from one continent to the other. All that facts are reasons for a serious suspicion that there is the appearance of the new race(s) of yellow rust on wheat in Serbia.

AB - In order to determine the effect of the number of grains infested with sunn pest (Eurygaster austriaca Schrk. and Emygaster maura L.) on the quality of wheat (Triticum aestivum L.), we analyzed five commercial varieties of bread wheat grown in field conditions in 2003/2004 on ten localities in Vojvodina, Republic of Serbia. A range from 0.8% to 8.26% of infested grains was registered on the analyzed sites. Reduction of quality traits (protein content - PC, sedimentation value - SV1, modified sedimentation value - SV2, wet gluten content - WG and energy test - E) was observed in accordance to the number of infested grains (damaged grain - DG). Statistically significant differences were determined in the number of damaged grains and analyzed quality traits between localities, varieties and their interaction (locality x variety). Although there was significant variation for the PC, WG and SV1 between localities, it was not as high as for SV2 and E. Obtained by modified Zeleny test, SV2 is considered to be an objective parameter for determining the infested grains. Results of this study indicated a different intensity of bug attack in researched localities. In addition, there was a different reaction of varieties to the wheat bugs bite, which may be used in plant breeding programs for the improvement of bread wheat resistance against attack of bugs.

AB - Knowledge of the relationship between grain yield and yield components is very important for efficient breeding for yield, considering that it is the most important economic trait and has a very complex mode of inheritance and low heritability. The aim of this study was to determine the correlation and the direct and indirect effects of grain filling rate and the traits that affect the yield of wheat. The experiment was conducted during two growing seasons 2008/2009 and 2009/2010 with 20 different varieties of common wheat. Weight and number of grains per spike, 1000 grain weight, plant height, duration and rate of grain filling were analyzed. Correlation coefficients were calculated as well as the direct and indirect effects of these traits on grain yield. Highly significant positive correlation was found between the rate of grain filling and 1000 grain weight, grain weight per spike and number of grains per spike. Also, a significant positive correlation was found between 1000 grain weight and grain weight per spike. According to the path analysis, the duration of grain filling, grain filling rate and grain weight per spike showed a positive but not significant direct effect on grain yield. The plant height had the greatest direct negative effect on yield. According to the results, it was concluded that traits such as grain filling rate together with plant height, might be of importance as criteria in the selection of future breeding for yield in the particular agro-climatic conditions.

AB - The yield of wheat is influenced by a number of factors. Climatic effects during the growing season can be mitigated by proper selection of cultivars and agricultural practice. Five high-yielding and widely spread NS wheat cultivars (Zvezdana, NS 40S, Simonida, Rapsodija i Pobeda) were analyzed in the two- year period (2012-2013) at four locations (Rimski Šančevi, Kikinda, Sombor i Ruma). The highest average grain yield had cv. Zvezdana (7.81 t/ha), while the cultivar NS 40S exhibited the greatest variations among years and locations. Location Rimski Šančevi had the highest average yield (8.81 t/ha). Growing season 2012 was characterized by a significantly lower grain yield (6.82 t/ha) as compared to the year 2013 (8:15 t/ha), in which less variation in yield between varieties was observed. Ability to adapt to the specific soil and microclimate conditions in some locations, has the greatest influence on realization of the productive potential of cultivated varieties.
AB - Prinos pšenice uslovljen je velikim brojem faktora. Nepovoljni klimatski efekti tokom vegetacione sezone, mogu se ublažiti pravilnim izborom sorte i sortne agrotehnike. Pet visokoprinosnih i široko raspostranjenih NS sorti pšenice (Zvezdana, NS 40S, Simonida, Rapsodija i Pobeda) analizirano je u dvogodišnjem periodu (2012-2013) na četiri lokaliteta (Rimski Šančevi, Kikinda, Sombor i Ruma).

AB - Gluten content, and more importantly its composition expressed through glutenin subunits, has great influence on the rheological and bread-making properties of wheat flour. Total of 168 winter wheat cultivars developed at the Institute of Field and Vegetable Crops, Novi Sad, Serbia in the period 1987-2008 were analysed for high molecular weight glutenin subunits (HMWGS) composition using SDS-PAGE. Presence of twelve different alleles and nineteen different GS combinations was determined. The highest frequency was found for GS N at the locus Glu-A1 (46%), 7+9 (77%) at the locus Glu-B1 and 5+10 (72.7%) at the locus Glu-D1. The most frequent combination was 2*, 7+9, 5+10. Presence of several rare GS with positive effect (13+16 and 15+16) was determined, as well as high uniformity of the genetic material, considering small number of cultivars (4.2%) with different electrophoretic paths. Two modes of glutenin score (Glu-1 score) determination were applied, based on which differences in bread-making quality among individual cultivars can be determined more precisely.

abstract = "Gluten content, and more importantly its composition expressed through glutenin subunits, has great influence on the rheological and bread-making properties of wheat flour. Two modes of glutenin score (Glu-1 score) determination were applied, based on which differences in bread-making quality among individual cultivars can be determined more precisely., Sadržaj glutena, ali pre svega njegova kompozicija izražena kroz gluteninske subjedinice, značajno utiče na reološke i pekarske pokazatelje pšeničnog brašna.

AB - Agro meteorological conditions are of great importance for the successful production of wheat. This paper analyzes the NS five varieties of winter wheat in the period 2010-2012. The experiment was conducted with different planting densities at the site Rimski Šančevi. Unlike the temperature, the amount and distribution of precipitation had a greater impact on the realization of the yield. Higher average grain yield was achieved at a higher sowing density, where, among analyzed varieties no big difference was observed between the yield at a lower or higher sowing norms. To make the right conclusions it is necessary to include a greater number of sites and different growing seasons.

AB - Wheat quality is a complex collection of traits affected by various loci on multiple chromosomes. This study was conducted in order to identify quantitative trait loci (QTLs) related to most commonly used quality parameters, protein content (PC) and sedimentation value (SED). For this purpose association analysis between SSR molecular markers and quality traits was performed on a selected sample of 94 diverse wheat genotypes. Quality parameters were determined during five years (2007-2011). Microsatellite markers located near targeted QTLs were carefully chosen in accordance with existing literature data. Genomic DNA was extracted from seedlings using CTAB method and PCR products were separated by capillary electrophoresis. The population structure was estimated in Structure v.2.0. software and association analysis was performed in the program Tassel. Significant marker-trait associations (MTAs) were found for the both quality parameters. The markers WMC31 and GWM18 showed significant and stabile associations with QTLs for PC and SED, respectively. Our results demonstrated that association analysis could complement and enhance previous QTL information and provide very useful information for marker-assisted selection.
