AB  - Kvalitet i oksidativna stabilnost su najvažnije osobine jestivih ulja. Oni ukazuju na mogućnost upotrebe ulja u tehnološkim procesima, kao i na njegov rok trajanja. Sastav masnih kiselina je od posebnog značaja sa aspekta oksidativne stabilnosti. Što je veći sadržaj nezasićenih i manji sadržaj zasićenih masnih kiselina, reakcija oksidacije se odvija brže. Najpodložnija oksidativnim promenama je linolenska masna kiselina, zatim linolna i oleinska masna kiselina. Poboljšanje oksidativne stabilnosti ulja može se postići dodatkom različitih komponenti sa antioksidativnim svojstvima: sintetičkim antioksidansima, biljnim ekstraktima ili biljkama. U ovom radu je ispitivan uticaj dodatka ruzmarina i belog luka u ulje suncokreta linolnog i visokooleinskog tipa na kvalitet i oksidativnu stabilnost.
AB  - Oxidative stability is one of the most important parameters of edible oil quality. It indicates the possibility of using the oil in technological processes, as well as the shelf life. The fatty acids composition is of particular importance from the aspect of oxidative stability. The higher the unsaturated fatty acids content and the lower saturated fatty acids content is, the faster the oxidation reaction takes place. The most susceptible to oxidative changes is linolenic fatty acid, followed by linoleic and oleic fatty acids. Improving the oxidative stability of the oil can be achieved by adding different components with antioxidant properties such as synthetic antioxidants, plant extracts or plants. In this paper, the effect of adding rosemary and garlic to linoleic and high-oleic sunflower oil on quality and oxidative stability was investigated.

AB  - In this work, the chemical composition analysis was performed for cold pressed oils
obtained from the 15 sunflower hybrids grown in Serbia and Argentina, as well as the determination of their oxidative quality. The fatty acid composition and bioactive compounds including total tocopherols, phenols, carotenoids, and chlorophyll contents were investigated. The oxidation products were monitored through the peroxide value (PV), anisidine value (AnV), conjugated dienes (CD) and conjugated trienes (CT) content, and total oxidation index (TOTOX) under accelerated oxidation conditions by the oven method.
Results: Linoleic acid was the most abundant fatty acid in investigated oil samples, followed by oleic and palmitic acids. The mean contents of total tocopherols, phenols, carotenoids, and chlorophyll were 518.24, 9.42, 7.54 and 0.99 mg/kg, respectively. In order to obtain an overview
of sample variations according to the tested parameters Principal Component Analysis (PCA) was
applied.
Conclusion: PCA indicated that phenols, chlorophyll, linoleic and oleic acid were the most
effective variables for the differentiation of sunflower hybrids grown in Serbia and Argentina.
Furthermore, based on the fatty acid composition and bioactive compounds content in the oils, a
new Artificial Neural Network (ANN) model was developed to predict the oxidative stability
parameters of cold pressed sunflower oil.

AB  - U radu je određen masnokiselinski sastav različitih biljnih ulja primenom gasne hromatografije uz detekciju plameno-jonizujućim detektorom. Analizirana ulja dobijena su presovanjem semena različitih genotipova susama, nauta, krtičnjaka, lana, bamije, šafranike, bundeve i uljane tikve iz kolekcije alternativnih uljanih vrsta Instituta za ratarstvo i povrtarstvo Novi Sad, uzgajanih tokom 2021. godine. Na osnovu sastava pojedinačnih masnih kiselina u ispitivanim uzorcima određen je sadržaj zasićenih masnih kiselina (ZMK), nezasićenih masnih kiselina (NZMK), mononezasićenih masnih kiselina (MNMK), polinezasićenih masnih kiselina (PNMK), w3, w6, 6/w3, kao i nutritivni indeksi: AI, TI i HH, na osnovu kojih je procenjen kvalitet biljnih ulja. Ispitivane uzorke karakterisao je relativno nizak sadržaj ZMK i visok sadržaj NZMK. Vrednosti nutritivnih indeksa kretale su se u rasponu: AI 0,06-0,38; TI 0,08-0,75 i HH 2,75-18,91. Za razliku od bamijinog ulja, koje se pokazalo kao biljno ulje najnepoželjnijeg nutritivnog kvaliteta, u pogledu visokog sadržaja ZMK i nepovoljnih vrednosti nutritivnih indeksa, već ina ostalih ulja mogu se okarakterisati kao vredni izvori oleinske, linolne i linolenske kiseline, a jedino je ulje lana imalo povoljnu nisku vednost w6/w3 masnih kiselina.
AB  - In this paper, the fatty acid composition of various vegetable oils was determined using gas chromatography with flame-ionizing detection. The analysed oils were obtained by pressing seeds of different genotypes of sesame, chickpeas, caper spurge, flax, okra, saffron, pumpkin and oily gourd from the collection of alternative oil varieties of the Institute of Field and Vegetable Crops Novi Sad grown during 2020. Based on the composition of individual fatty acids in the tested samples, the content of saturated fatty acids (SFA), unsaturated fatty acids (UFA), monounsaturated fatty acids (MUFA), polyunsaturated fatty acids (PUFA), w3, w6, w6/w3 was determined, as well as nutritional indices: AI, TI and HH, on the basis of which the quality of vegetable oils was assessed. The investigated samples were characterized by relatively low content of SFA and high content of UFA. The values of nutritional indices ranged from AI 0.06-0.38, TI 0.08-0.75 and HH 2.75-18.91. Unlike okra oil, which has proven to be a vegetable oil of the undesirable nutritional quality, in terms of the high content of SFA and unfavorable values of nutritional indices, most other oils can be characterized as valuable sources of oleic, linoleic and linolenic acid, while only flaxseed oil and molehill oil had favorable low values of w6/w3 fatty acids.

Differences determination between seed characteristics of new sunflower hybrid using hierarchical cluster analysis

AB  - Sunflower breeders aims to create highly productive hybrids with increased protein content for human and 
poultry consumption, to create highly productive hybrids with high oil content, hybrids tolerant to dominant 
diseases and pests, highly productive hybrids with altered oil quality, highly productive hybrids resistant to 
certain herbicide groups, etc. In this paper, the characterization of the latest sunflower oily hybrids grown on the 
territory of Serbia and Argentina and the latest confectionery sunflower hybrids grown in Serbia are performed. 
Seed characterization included examination of seed moisture and oil content, seed dimensions (length, width, 
thickness), geometric characteristics (equivalent diameter, surface area, seed volume, sphericity), gravimetric 
characteristics (true density, bulk density, porosity), general characteristics (hull content, thousand seeds mass), 
firmness and color characteristics. Hierarchical cluster analysis (HCA) was applied to the obtained results in 
order to determine the differences between the samples. Obtained dendrogram shows two clusters a and b, clear 
grouping of samples into confectionary and oily hybrids. Within cluster b, two subclusters are observed. 
Subcluster I includes oil hybrids grown in Argentina while subcluster II includes oil hybrids grown in Serbia. 
Observing the groups obtained by HCA it was noticed that the greatest similarity was found among oil hybrids 
grown in Serbia, while the greatest difference was found among confectionery hybrids. Diversity among oily 
hybrids grown in Serbia obtained by HCA, expressed as the Manhattan distance value, ranged from 3.2 to 9.6. 
Confectionery hybrids mutually differed significantly, Manhattan distance values ranged from 6.2 to 22.6

certain herbicide groups, etc. In this paper, the characterization of the latest sunflower oily hybrids grown on the 
territory of Serbia and Argentina and the latest confectionery sunflower hybrids grown in Serbia are performed. 
Seed characterization included examination of seed moisture and oil content, seed dimensions (length, width, 
thickness), geometric characteristics (equivalent diameter, surface area, seed volume, sphericity), gravimetric 
characteristics (true density, bulk density, porosity), general characteristics (hull content, thousand seeds mass), 
firmness and color characteristics. Hierarchical cluster analysis (HCA) was applied to the obtained results in 
order to determine the differences between the samples. Obtained dendrogram shows two clusters a and b, clear 
grouping of samples into confectionary and oily hybrids. Within cluster b, two subclusters are observed. 
Subcluster I includes oil hybrids grown in Argentina while subcluster II includes oil hybrids grown in Serbia. 
Observing the groups obtained by HCA it was noticed that the greatest similarity was found among oil hybrids 
grown in Serbia, while the greatest difference was found among confectionery hybrids. Diversity among oily 
hybrids grown in Serbia obtained by HCA, expressed as the Manhattan distance value, ranged from 3.2 to 9.6. 
Confectionery hybrids mutually differed significantly, Manhattan distance values ranged from 6.2 to 22.6",

AB  - Mechanical extraction is one of the oldest oil extraction methods. The advantages of mechanical extraction of oil 
in relation to chemical are better oil quality and greater possibility of using pressing cake compared to meal 
containing traces of solvent. Critical parameters in the cold pressed oil production are the raw (pressing) material 
characteristics (type, hull content, oil and moisture content), feeding the press with pressing material, 
temperature, expeller screws speed rotation, nozzles diameter, pre-treatment of pressing material. Since 
sunflower oil belongs to the group of the most represented edible vegetable oils in the world, as in Serbia, this 
paper aims to investigate the newest sunflower hybrids. The aim of this study was to examine the influence of 
sunflower seed characteristics on pressing capacity, oil yield and pressing parameters using global sensitivity 
analysis. The mentioned analysis was preceded by the application of artificial neural networks, which was used 
to predict the capacity, oil yield and pressing parameters based on the obtained characteristics of the seed. It was 
determined that the oil and seed yield had the greatest positive impact on the seeds oil content (24.43 and 
26.85%, respectively), as well as the mass of pressing materials (10.04 and 11.64%). The biggest negative 
impact on these two output parameters had the cake oil content (-16.65 and -14.31%). The obtained result 
indicates that the seeds mass has a decisive influence on the seeds flow through the press, and confectionary 
sunflower hybrids with a significantly higher 1000 seeds mass, compared to oily hybrids, had a significantly 
lower seed flow. Also, the global sensitivity analysis confirmed that sunflower seeds with higher dimensions and 
seeds mass reached higher oil temperature during pressing.

Today, oily sunflower hybrid seed contain over 40% of the oil. There are two ways of oil extraction: chemically using solvents or mechanically using presses. The oil yield is higher during solvent extraction, however, such oil requires further refining. A lower oil yield is obtained by extracting the oil by pressing but this oil requires minimal additional treatment. Oil yield obtained by pressing on the screw press is influenced by the characteristics of the seed (eg oil content, moisture, hull content, impurity content, etc.) and screw press characteristics.

AB  - Sunflower seed hybridization is aimed at increasing the oil content of the seed as a basic technological requirement. Sunflower hybrids with high oil content (over 40%) are known as oily hybrids.  ese hybrids are characterized by black seeds, with a thin hull, with no significant variations in dimensions. On the other hand, the potential of sunflower protein has been increasingly recognized lately, and sunflower hybrids with increased protein content, non-oily (confectionary) sunflower hybrid seeds are being created. Confectionary hybrids are characterized by larger seeds with a thicker, most commonly black and white stripes hull. In this paper, the geometric characteristics of two oily and two non-oily sunflower hybrid seeds were analized and compared. Geometric characteristics were determined using a vernier caliper per 100 individual seeds with an accuracy of 0.05 mm.

AB  - Proizvodnja ulja postupkom hladnog presovanja pomoću pužnih presa je jedan od najstarijih načina izdvajanja ulja pri čemu je uticaj načina izdvajanja na kvalitet dobijenog ulja minimalan. Za dobijanje ulja uglavnom se koriste hibridi suncokreta sa većim sadržajem ulja u semenu (preko 40%), poznati kao uljani hibridi, međutim na tržištu postaju sve zastupljeniji i konzumni hibridi suncokreta koji imaju manji sadržaj ulja (oko 30%), a veći sadržaj proteina. Ovi hibridi uglavnom se koriste za direktnu konzumaciju, kao i u proizvodnji pekarskih i konditorskih proizvoda, međutim sadržaj ulja u ovim hibridima je čak veći u poređenju sa drugim uljaricama (npr. soji koja sadrži oko 20% ulja u semenu). U ovom radu ispitana je mogućnost primene konzumnih hibrida suncokreta u svrhu dobijanja hladno presovanog ulja. Semena tri najnovija konzumna hibrida suncokreta, kao i seme jednog uljanog hibrida presovana su pri istim uslovima i ispitano je iskorišćenje i kapacitet presovanja. Na osnovu dobijenih rezultata zaključeno je da potencijal za proizvodnju hladno presovanih ulja od semena konzumnih hibrida postoji, međutim potrebno je izvršiti optimizaciju procesa.
AB  - Oil production by cold pressing on a screw press is one of the oldest methods of oil separation, where the impact of the production method on the oil quality is minimal. Sunflower hybrids with a higher seed oil content (over 40%), known as oily hybrids, are mainly used for oil production, however, sunflower hybrids with a lower oil content (about 30%) and higher protein content are becoming more common on the market. These (confectionary) hybrids are mainly used for direct consumption and the confectionery industry, however the oil content in these hybrids is even higher compared to other oilseeds (e.g. soybeans containing about 20% seed oil). In this paper, the possibility of using confectionary sunflower hybrids for cold-pressed oil production was investigated. The seeds of the three newest confectionary sunflower hybrids, as well as one oily hybrid were pressed under the same conditions and the yields and pressing capacity were tested. Based on the obtained results, it was concluded that the potential for the cold-pressed oil production from the confectionary hybrid seeds exists, however, it is necessary to optimize the process.

AB  - Refined sunflower oil has dissimilar shelf life compared to cold-pressed sunflower oil, which increases the use of refined oil, and it is more abundant in the diet. On the other hand, the production of cold-pressed oils does not require chemical processing. Moreover, these oils contain significant amounts of bioactive components with a beneficial health effect. Breeders are trying to create new sunflower hybrids for the production of cold-pressed oil with improved oxidative characteristics. This study aims to examine the rancidity of 24 cold-pressed sunflower oils of new hybrids under accelerated thermal stability test conditions (Rancimat and Schaal oven tests) and to compare the obtained results with refined sunflower oil. According to investigated oxidative parameters, the most similar to refined sunflower oil was the H20 sample with the induction period determined by the Rancimat test of 9.55 ± 0.00 h, compared to 9.49 ± 0.00 h, obtained in refined sunflower oil. The total oxidation value of the H20 sample amounted to 3.26 ± 0.12, while in refined sunflower oil this value was 2.12 ± 1.73.

Karakterizacija masnokiselinskog sastava mešanih ulja suncokreta i lana sa aspekta faktora nutritivnog kvaliteta

AB  - U ovom radu ispitana je mogućnost poboljšanja nutritivnog kvaliteta rafinisanog suncokretovog ulja (S) dodavanjem hladno presovanog lanenog ulja (L) sa aspekta masnokiselinskog sastava, kao i određenih nutritivnih indeksa. Sadržaj masnih kiselina određen je primenom gasne hromatografije - masene spektrometrije, analizom metil estara masnih kiselina. Sadržaji zasićenih masnih kiselina (ZMK), mononezasićenih masnih kiselina (MNMK), polinezasićenih masnih kiselina (PNMK), kao i sadržaj ω3 i ω6 masnih kiselina određen je računski. Dodavanjem lanenog ulja uočeno je značajno povećanje sadržaja ω3 masne kiseline u dobijenim mešanim uljima. Pri mešanju nisu uočene značajne promene u sadržaju ZMK, sadržaj MNMK se dodavanjem lanenog ulja smanjio sa 30,44 % m/m na 17,15 % m/m, dok se sadržaj PNMK povećao od 59,78 % m/m do 73,15 % m/m. Dobijeni odnosi PNMK/ZMK za mešana ulja bili su u rasponu 6,07-7,54, što je u skladu sa smanjenjem faktora rizika za povećanje nivoa holesterola u krvi. Aterogeni i trombogeni indeksi bili su mnogo niži od 1, dok su HH indeksi bili relativno visoki 14,70-18,03, što je takođe u skladu sa preporučenim vrednostima sa nutritivnog aspekta kvaliteta ulja. Kriterijum koji je najviše uticao na kvalitet mešanih ulja bio je ω6/ω3 odnos, a optimalne vrednosti ovog odnosa (1-5) postignute su dodavanjem od 30 do 60% hladno presovanog lanenog ulja. U odnosu na kontrolni uzorak O, dobijena mešana ulja pokazala su veliku prednost po pitanju sadržaja PNMK, ω3, ω6, dok je izuzetno visok sadržaj MNMK i nešto niži sadržaj ZMK određen u uzorku O.
AB  - In this paper, the possibility of improving the nutritional quality of refined sunflower oil (S) by adding cold pressed flaxseed oil (L) from the aspect of fatty acid content, as well as certain nutritional indices, was investigated. The content of fatty acids was determined using gas chromatography - mass spectrometry, by analysing fatty acid methyl esters. The contents of saturated fatty acids (SFA), monounsaturated fatty acids (MUFA), polyunsaturated fatty acids (PUFA), as well as the content of ω3 and ω6 fatty acids were calculated. By adding flaxseed oil, a significant increase in the content of ω3 fatty acid was observed in the obtained mixtures. No significant changes in the content of SFA were observed during mixing, the content of MUFA was reduced by the addition of flaxseed oil from 30.44 % m/m to 17.15 % m/m, while the content of PUFA increased from 59.78 % m/m to 73.15 % m/m. The obtained PUFA/SFA ratios for mixtures ranged from 6.07 to 7.54, which is consistent with a reduction in risk factors for increased blood cholesterol levels. Atherogenic and thrombogenic indices were much lower than 1, while HH indices were relatively high 14.70-18.03, which are also in accordance with the recommended values from the nutritional aspect of oil quality. The criterion that most affected the quality of mixed oils was the ω6/ω3 ratio, and the optimal values of this ratio (1-5) were achieved by adding 30 to 60% of cold pressed flaxseed oil. Compared to the control sample O, the obtained mixtures showed a great advantage in terms of PUFA content, ω3, ω6, while the extremely high MUFA content and slightly lower SFA content determined in sample O.

AB  - Suncokret spada u prvih pet najzastupljenijih uljarica na svetu, kao i suncokretovo ulje u grupi jestivih ulja. Sve veća pažnja posvećuje se hladno presovanom suncokretovom ulju jer nije uključena dalja prerada ulja, a sama tehnologija hladnog presovanja pomoću pužne prese ne koristi rastvarač. Danas su zastupljene dve grupe hibrida suncokreta: uljani čija je prvenstvena namena proizvodnja ulja i konzumni, koji se prvenstvaneo koriste za direktnu konzumaciju. Cilj ovog rada bio je da se ispita iskorišćenje ulja i semena uljanih i konzumnih hibrida suncokreta prilikom presovanja na pužnoj presi. Značajno veće vrednosti iskorišćenja ulja i semena utvrđene su kod uljanih hibrida suncokreta (od 64,05 ± 2,48 do 75,61 ± 1,99 % i od 51,76 ± 1,94 do 64,41 ± 1,67 %, redom) u odnosu na konzumne (od 24,21 ± 4,88 do 52,73 ± 0,30 % i od 19,26 ± 3,84 do 41,86 ± 0,21 %).
AB  - Sunflower seed is one of the top five most abundant oilseeds in the world, as well as sunflower oil in the group of edible oils. Increasing attention is being paid to cold-pressed sunflower oil because no further oil processing is involved and the cold-pressing technology itself using a screw press does not use a solvent. Today, two groups of sunflower hybrids are represented: oily hybrid seeds whose primary purpose is oil production and confectionary hybrids, primarily used for direct consumption. The aim of this study was to examine the oil and seed yield of oily and confectionary sunflower hybrids pressed on a screw press. Significantly higher values of oil and seed yield were found in oily hybrids (from 64.05 ± 2.48 to 75.61 ± 1.99% and from 51.76 ± 1.94 to 64.41 ± 1.67%, respectively) compared with confectionary sunflower hybrids (from 24.21 ± 4.88 to 52.73 ± 0.30% and from 19.26 ± 3.84 to 41.86 ± 0.21%).

AB  - U svetu, prema podacima Organizacije za hranu i poljoprivredu (Food and Agriculture Organization, FAO) i Departmana za poljoprivredu Sjedinjenih Američkih Država (United States Department of Agriculture, USDA) proizvodnja semena suncokreta raste. Takođe, u svetu rastu i potrebe za proizvodnjom ulja i visokokvalitetnih proteina, zbog čega su se izdiferencirali i hibridi suncokreta u cilju zadovoljenja pomenutih potreba na uljane i konzumne (neuljane, proteinske). Istraživanjem u ovom radu pokazano je da je proizvodnja ulja postupkom hladnog presovanja moguća i od konzumnih hibrida suncokreta, ne samo od uljanih, međutim razlike u iskorišćenju i kapacitetu tj. količini dobijenog ulja su značajne. Iskorišćenje ulja i semena bili su 2,12 i 2,17 puta veći kod uljanih u odnosu na konzumne hibride suncokreta, dok za 1 h kroz presu prođe 1,84 puta više semena i dobije se 3,89 puta više ulja, kod uljanih u odnosu na konzumne hibride suncokreta.

The needs for the production of oil and high-quality proteins are growing in the world, which is the reason for sunflower hybrids divergence in oily and confectionary (non-oily, protein) hybrids, in order to meet the mentioned needs. Research in the paper has shown that the production of oil by cold pressing is possible from confectionary sunflower hybrids, not only from oily, but the differences in the oil yield and amount of obtained oil are significant. Recently, increasing attention has been paid to cold-pressed sunflower oil because less processing is involved and no solvent is used. The present study was carried out to investigate dimensions (length, width, thickness), firmness, general (moisture content and hull content, mass of 1000 seeds), gravimetric (true and bulk density, porosity) and geometric characteristics (equivalent diameter, surface area, seed volume, sphericity) of 20 new sunflower hybrid seeds. Steps to determine most of these parameters are quite simple and easy since the process does not require long time or special equipment. RESULTS Principal component analysis and cluster analysis confirmed differences in the mentioned characteristics between oily and confectionary sunflower hybrid seeds. One of the major differences between two groups of samples was in extraction oil yield. Mechanical extraction oil yield of the oily hybrid seeds was significantly (P ˂ 0.05) higher (from 68.72 ± 4.21% to 75.61 ± 1.99%) compared to confectionary hybrids (from 20.10 ± 2.82% to 39.91 ± 6.23%). Extraction oil yield values are known only after oil extraction. CONCLUSION Knowledge of the extraction oil yield value before the mechanical extraction enables better management of the process. By application of the artificial neural network approach, an optimal neural network model was developed. The developed model showed a good generalization capability to predict the mechanical extraction oil yield of new sunflower hybrids based on the experimental data, which was a main goal of this paper.

AB  - Most vegetable oils obtained by cold pressing are yellow or yellowish-brown, with red or green tone. The color of the oil is a consequence of the presence of colored macromolecules (pigments).  The most common natural pigments in the oils are carotenoids (yellow) and chlorophylls, green color pigments. The color is also affected by the content of various non-glyceride ingredients present in the oils, but also by various products formed during the inadequate management of the technological process. The aim of this study was to examine the content of the most abundant pigments (total carotenoids and total chlorophylls) in sunflower oil obtained by cold pressing of three confectionary (non-oily) sunflower hybrids (NS-H-6318, NS-H-6307 and NS-H-6308), as well as to determine their influence on instrumentally determined color parameters (CIE L*a *b* system and transparency). Negative a* values noticed in examined samples indicate presence of green pigments in examined oils.

AB  - Sunflower seeds (Helianthus annus L.) are the most represented oilseed in Serbia. During
the oil production process, the seeds are partially and/or completely dehulled. Sharma et al. (2009)
found that, in addition to the moisture content of the seed, the effect of dehulling is also significantly
influenced by seed firmness. The dehulling effect increases with decreasing seed firmness. This
paper examines the technological characteristics of sunflower seeds of selected hybrids (true density,
content of hull in seeds and mass of 1000 grains expressed on dry matter), based on which a
mathematical model for prediction of seed firmness was made. The tested samples are oily hybrids,
grown on the territory of Serbia in 2017, namely: NS Horizont, Sumo 2 OR, NS Sumo Sjaj, NS
Samuraj CLP, NS Smaragd CLP. True density, content of hull in seed, and mass of 1000 grains
expressed on dry matter were made according to Karlovi¢ and Andri¢ (1996), while seed firmness
was made using Texture Analyzer TA.HD Plus (Stable Micro Systems, Godalming, U.K.). Firmness
of the samples tested ranged from 5522.67 + 765.40 to 6889.10 + 1220.62 g, true density from 753.92 +
18.23 to 877.33 + 0.93 kg m°%, hull content of 47.54 + 0.13 to 55.15 + 0.87% and a mass of 1000 grains
expressed on dry matter of 48.83 + 0.80 to 57.10 + 2.52 g. Model validation was also performed, and
based on the statistical validation parameters, it is concluded that it is possible to predict seed
firmness based on its technological characteristics.

AB  - The cold pressed sunflower oil is obtained by mechanical extraction from the seed which is pressed
with a different content of the hull. The content of the hull in the seed is conditioned by the type of
hybrid and affects the quality and yield of cold pressed oil as well as the quality of the obtained
cake. In addition to the contents of the hull, the yield of the pressing is influenced by the type of raw
material. ie the content of the oil in the material for pressing, then the preparation of the material,
the granulometric composition, residual impurities, etc. The structure and power of the presses, as
well as the pressing conditions (pressure, temperature, duration of the process, the content of the oil
in the cake, the moisture content of the raw material, etc.), also affect the effectiveness of pressing
(yield).
In this paper, the exploitation of the pressing (yield value) of the latest oil hybrids of the secondary
filial (F2) generation grown on the territory of the Republic of Serbia was examined. The yield
value in five different oil hybrids (Dusko, Orfej, NS Konstantin, NS Ronin and NS Horizont) was
calculated on the basis of the oil content of seed and cake obtained after pressing. The content of the
oil was determined according to SRPS EN ISO 659:2011, while the moisture content was made
according to SRPS EN ISO 665:2008.
The seed oil content ranged from 32.52 + 2.16 to 41.66 + 2.08 %, while the moisture content in
these seeds ranged from 5.92 + 0.04 to 6.08 + 0.08 %. In the obtained cakes the content of oil was
determined from 14.80 + 0.05 to 17.64 + 0.01 %, while in the same cakes the moisture content was
in the range of 6.92 + 0.01 to 7.84 + 0.03 %. Of the examined samples, the maximum yield value
was determined for the sample of NS Konstantin and amounted to 75.61 + 1.99 %, while the lowest
yield value of 55.37 + 4.41 % was determined for the NS Horizont sample.

AB  - Content of the oxidation products is very important parameter of oil quality and oxidative
stability, ie. shelf life. In order to improve shelf life of oils, the breeders create new
sunflower hybrids with altered fatty acid composition as well as the content of minor
components that contribute to oxidative stability of oil (tocopherols, sterols, phenolic
compounds, etc.).
In order to examine the oxidative stability of the oil, sunflower seed oils of the same
latest hybrids of the secondary filial (F2) generation grown on the territory of the
Republic of Serbia and Argentina were analized. Samples were tempered at 63 + 2 °C
for a period of 8 days. The content of primary and secondary oxidation products was
monitored through the peroxide (PV) and anisidine values(p-AnV, as well as the content
of conjugated dienes (CD) and trienes (CT). After the 4" and 8" day, the samples were
taken and analysed and compared with the initial samples.
Based on the content of the resulting oxidation products the best oxidative stability
showed the oil seeds NS Horizont grown on the territory of Serbia. In this sample values
of the tested parameters of oxidative stability in the initial sample were PVinitial = 1.99 +
0.06 mmol/kg, p-AnVinitiar = 0.08 + 0.01 and after 8 days of testing: PVéin day = 30.32 +
0.03 mmol/kg, p-AnVsth day = 2.05 + 0.01. The same sample grown in Argentina showed
significantly poorer results: PVinitial = 2.00 + 0.07 mmol/kg, p-AnVinitial = 1.13 + 0.00 and
PVath day = 73.45 + 4.31 mmol/kg, p-AnVath day = 3.14 + 0.01.

AB  - Sunflower (Helianthus annuus L.) is an important oilseeds crop among the four major
oilseeds crop cultivated in the world viz., soybean, brassica, sunflower and groundnut. Two
types of sunflower are grown viz., gil seed purpose and non- oil seed sunflower for
commercial market. Non-oilseed sunflower is known as confectionery sunflower and their
seed generally is larger than that of the oilseed types and has a lower oil percentage with
high protein and sugar content. Vegetable oils are significant sources of antioxidants in
human nutrition. Natural antioxidants present in oils have obtained substantial attention
because of their health and nutritional effects. Plants produce of antioxidant compounds
such as tocopherols and tocotrienols to prevent oxidation of the susceptible substrate.
Antioxidant properties the tocopherols content of oils can give human health benefits like
modulating cancer, cardiovascular diseases and a protective effect by lowering LDL
cholesterol by inhibiting cholesterol biosynthesis. Over the last few years, increased interest
for natural antioxidant in cold-pressed plant oils has been observed since they have better
nutritive properties in comparation to refined ones. The aim of this study was to investigate
tocopherols composition (a-, B-, y- tocopherols) in selected 10 cold-pressed sunflower oils
obtained from confectionary sunflower hybrids cultivated in Serbia (2017 harvest).
Quantification of tocopherols was carried out using high performance liquid

Antioxidant properties the tocopherols content of oils can give human health benefits like
modulating cancer, cardiovascular diseases and a protective effect by lowering LDL
cholesterol by inhibiting cholesterol biosynthesis. Over the last few years, increased interest
for natural antioxidant in cold-pressed plant oils has been observed since they have better
nutritive properties in comparation to refined ones. The aim of this study was to investigate
tocopherols composition (a-, B-, y- tocopherols) in selected 10 cold-pressed sunflower oils
obtained from confectionary sunflower hybrids cultivated in Serbia (2017 harvest).

Oil content in the seeds are over 40%. The aim of this study was to investigate and compare seed dimensions of the same oil hybrids grown in Serbia and Argentina. The highest average length of 11.13 mm was determineted for sample NS Ronin grown in Serbia and sample Dusko grown in Argentina. 45.17% of investigated seeds had length between 10.00 and 10.99 mm, 42.83% had width in range of 5.00 to 5.99 mm, and the thickness of 47.00% of seeds was between 3 and 3.99 mm.

creating new specific products with the desired properties, which increases their commercial
application and improves their nutritional quality.
The effect of blending vegetable oils on tocopherols and carotenoids content was examined. Refined
sunflower seed oil (S) and cold pressed flaxseed oil (F) were used in the experiment. These oils are
blended in three different content of mass: sample 70S:30F (70% S and 30% F), sample 50S:50F
(50% S and 50% F) and sample 30S:70F (30% S and 70% F).
The results showed significant differences in the content of total tocopherols and total carotenoids
between the two oils used for the preparation of three blended oils. Refined sunflower seed oil
contains higher amounts of tocopherols and fewer amounts of carotenoids compared to cold pressed
flaxseed oil in which the content of tocopherols is lower and the content of carotenoids is higher. In the
obtained blends of edible vegetable oils, the content of total tocopherols ranged from 387.96 to 447.83
mg/kg while the determined total carotenoids content (as B-caroten) ranged from 3.11 to 5.63 mg/kg.
By blending refined oil of sunflower seed and cold pressed oil of flax-seed, the balance of the
parameters studied is contributed. The research in the work showed that the blending of vegetable oils
provides the possibility of modulating their composition, and therefore of nutritive quality.

AB  - Oxidative stability, i.c. shelf life of oil is related to the degree of the oxidative changes
in the amount of the resulting primary and secondary oxidation products of unsaturated fatty
acids. In order to improve oxidative stability, i.e. oil shelf life, sunflower hybrids with altered
fatty acid composition have been created, i.e. significantly higher oleic acid (C18:1) content,
even over 90% w/w, relative to the linoleic type with 25-30% w/w of oleic and 60-65% w/w
of linoleic acid (C18:2). In order to examine the oxidative stability of the oil, three samples of
sunflower seed oil NS hybrids (NS Oliva, NS Horizont and NS Romeo) of different fatty acid
composition were analyzed. Samples were exposed to moderate temperatures (6342°C) over a
period of 8 days. Changes in the content of primary and secondary oxidation products based
on changes in peroxide (PV) and anisidine (p-AnV) values, as well as changes in the content
of conjugated dienes and trienes, were observed. The highest oxidative stability was observed
in the oleic type oil sample. In this sample the determined values of the tested parameters of
oxidative stability, after 8 days, were PV=4.85 mmol/kg and p-AnV=0.65, compared to the
initial sample (PV=0.36 mmol/kg and p-AnV=0.57). The greatest oxidative changes occurred
in the oil sample with the lowest content of oleic and the highest content of linoleic acid, as
indicated by the PV=73.22 mmol/kg and p-AnV=3.60, after 8 days, in relation to PV=2.16
mmol/kg and p-AnV=0.50 in the initial linoleic type oil sample.

abstract = "Oxidative stability, i.c. shelf life of oil is related to the degree of the oxidative changes
in the amount of the resulting primary and secondary oxidation products of unsaturated fatty
acids. In order to improve oxidative stability, i.e. oil shelf life, sunflower hybrids with altered
fatty acid composition have been created, i.e. significantly higher oleic acid (C18:1) content,
even over 90% w/w, relative to the linoleic type with 25-30% w/w of oleic and 60-65% w/w
of linoleic acid (C18:2). In order to examine the oxidative stability of the oil, three samples of
sunflower seed oil NS hybrids (NS Oliva, NS Horizont and NS Romeo) of different fatty acid
composition were analyzed. Samples were exposed to moderate temperatures (6342°C) over a
period of 8 days. Changes in the content of primary and secondary oxidation products based
on changes in peroxide (PV) and anisidine (p-AnV) values, as well as changes in the content
of conjugated dienes and trienes, were observed. The highest oxidative stability was observed
in the oleic type oil sample. In this sample the determined values of the tested parameters of
oxidative stability, after 8 days, were PV=4.85 mmol/kg and p-AnV=0.65, compared to the
initial sample (PV=0.36 mmol/kg and p-AnV=0.57). The greatest oxidative changes occurred
in the oil sample with the lowest content of oleic and the highest content of linoleic acid, as
indicated by the PV=73.22 mmol/kg and p-AnV=3.60, after 8 days, in relation to PV=2.16
mmol/kg and p-AnV=0.50 in the initial linoleic type oil sample.",
