AB  - As byproducts of essential oil distillation, hydrolates are used in natural cosmetics/biomedicine due to their beneficial skin effects. However, data on their safety with relevant biological targets, such as human skin cells, are scarce. Therefore, we have tested nine hydrolates from the Lamiaceae family with skin fibroblasts that are responsible for extracellular collagenous matrix builds. Thyme, oregano, and winter savoury hydrolates showed several times higher total phenolics, which correlated strongly with their radical scavenging and antioxidative capacity; there was no correlation between their viability profiles and the reducing sugar levels. No proteins/peptides were detected.

AB  - Kao jedna od najznačajnijih sirovina za proizvodnju piva, šišarice hmelja se kuvaju sa sladovinom kako bi gorke, aromatične i taninske materije prešle iz šišarica u rastvor i dale sladovini svojstven gorak ukus i prijatnu aromu. Dodavanjem hmelja se u značanoj meri određuju parametri kvaliteta piva poput ukusa, biološke stabilnosti i pene. Domaći sortiment hmelja obuhvata staru, autohtonu sortu Bačka, kao i dve selekcionisane sorte Aroma i Robusta. Pored materija koje određuju pivarske parametre kvaliteta (sadržaj α i β-kiselina, gorkih materija, smola), šišarice domaćih sorti sadrže i etarska ulja – mirisnu, uljanu tečnost koja može da se izoluje različitim tehnikama u laboratorijskim i industrijskim uslovima. Etarsko ulje predstavlja lipofilnu smešu proizvoda sekundarnog metabolizma biljaka, koja se sastoji od više hemijskih jedinjenja izoprenoidne strukture, uklučujući i njihove derivate (estre, aldehide, ketone, alkohole, itd.).
AB  - As one of the most important raw materials for beer production, hop cones are boiled with wort so that the bitter, aromatic and tannic substances pass from the cones into the solution and give the wort its characteristic bitter taste and pleasant aroma. The addition of hops significantly determines beer quality parameters such as taste, biological stability and foam. The domestic assortment of hops includes the old, autochthonous variety Bačka, as well as two selected varieties Aroma and Robusta. In addition to substances that determine brewing quality parameters (content of α and β-acids, bitter substances, resins), pine cones of domestic varieties also contain essential oils - a fragrant, oily liquid that can be isolated using different techniques in laboratory and industrial conditions. Essential oil is a lipophilic mixture of products of the secondary metabolism of plants, which consists of several chemical compounds of the isoprenoid structure, including their derivatives (esters, aldehydes, ketones, alcohols, etc.).

AB  - This study aimed to investigate the chemical composition of steam distillate essential oil and corresponding hydrolate obtained from S. officinalis grown in Serbia, as well as the influence of weather conditions (temperature and precipitations) on their chemical profiles. Furthermore, their antimicrobial activity was investigated in vitro. The main compounds in essential oil were cis-thujone, followed by camphor, trans-thujone, and 1,8-cineole, while hydrolate was slightly different from the essential oil, with camphor, cis-thujone, and 1,8-cineole as the main compounds. Among the eight respiratory-associated microorganisms, Klebsiella oxytoca was the most sensitive to the tested EOs (minimum inhibitory concentration (MIC)/minimal bactericidal/fungicidal concentration (MBC/MFC) were 14.20 and 28.4 μL mL−1, respectively). MIC and MBC values of other tested bacteria ranged between 28.40 and 227.25 μL mL−1 while for Candida albicans MIC/MFC ranged from 28.40/56.81 to 56.81–113.63 μL mL−1. Antibiotic susceptibility patterns for the analyzed eight respiratory-associated microorganisms showed an intermediate level of resistance to commonly used antibiotics such as ampicillin, levofloxacin, and ciprofloxacin. As a preliminary approach to the antimicrobial profiling of the tested EO, the obtained results revealed that the tested samples possess remarkable antibacterial activities and could be used to develop pharmaceutical formulations as an alternative to conventional antibiotic therapy.

Weather conditions Influence on lavandin essential oil and hydrolate quality

AB  - Lavandula sp. essential oil and hydrolate are commercially valuable in various industry branches with the potential for wide-ranging applications. This study aimed to evaluate the quality of these products obtained from L. x intermedia cv. ‘Budrovka’ for the first time cultivated on Fruška Gora Mt. (Serbia) during three successive seasons (2019, 2020, and 2021). Essential oil extraction was obtained by steam distillation, and the composition and influence of weather conditions were also assessed, using flowering tops. The obtained essential oils and hydrolates were analysed by gas chromatography with a flame ionization detector (GC-FID) and gas chromatography coupled to mass spectrometry (GC-MS). A linear regression model was developed to predict L. x intermedia cv. ‘Budrovka’ essential oil volatile compound content and hydrolate composition during three years, according to temperature and precipitation data, and the appropriate regression coefficients were calculated, while the correlation analysis was employed to analyse the correlations in hydrolate and essential oil compounds. To completely describe the structure of the research data that would present a better insight into the similarities and differences among the diverse L. x intermedia cv. ‘Budrovka’ samples, the PCA was used. The most dominant in L. intermedia cv. ‘Budrovka’ essential oil and hydrolate were oxygenated monoterpenes: linalool, 1,8-cineole, borneol, linalyl acetate, and terpinene-4-ol. It is established that the temperature was positively correlated with all essential oil and hydrolate compounds. The precipitations were positively correlated with the main compounds (linalool, 1,8-cineole, and borneol), while the other compounds’ content negatively correlated to precipitation. The results indicated that Fruška Gora Mt. has suitable agro-ecological requirements for cultivating Lavandula sp. and providing satisfactory essential oil and hydrolate

AB  - In the essential oil of yarrow (Achillea millefolium L. sensu lato) collected from natural population on Mt. Rtanj (Serbia) and distilled by Clevenger apparatus 104 compounds were detected, and the most abundant were camphor (9.8%), caryophyllene oxide (6.5%), terpinen-4-ol (6.3%) and 1,8-cineole (5.6%). The quantitative structure-retention relationship (QSRR) model was employed to predict the retention indices, using four molecular descriptors selected by factor analysis and a genetic algorithm. The coefficients of determination reached the value of 0.862, demonstrating that this model could be used for prediction purposes.

AB  - Family Apiaceae is very big, with more than 3.700 species distributed throughout the world. There are specific umbeliferous flowers and odor characteristic for each individual species. Anethum graveolens L. is one of them and due to its herbal warm-spicy odor it is often used as spice in cooking, as dry seed and fresh or dry leaves. Apart from this, it is one of the most popular traditional remedies in many countries. Research has proven numerous positive effects of this plant on the human body, therefore phytoremedies with dill addition are formulated. It is also a very popular nutraceutical. Furthermore, in recent years, bioactive potential of many medicinal and aromatic plants is investigated for their application in organic agriculture, for improving biodiversity and as a biopesticide. Constituents in dill responsible for all this are essential oil with carvone and limonene and phenolic compounds. Due to great demand for high-quality raw material, A. graveolens is mainly cultivated. Postharvest processing is also very important for maintaining high-quality of raw material. Postdistillation waste material can also be useful, especially as feed.

AB  - Fitopatogene gljive značajno ugrožavaju kvalitet plodova jabuke tokom skladištenja. Vrste Colletotrichum acutatum i Colletotrichum gloeosporioides, prouzrokovači gorke truleži (antraknoze) plodova jabuke, u pojedinim godinama prouzrokuju značajne gubitke. Colletotrichum spp. zarazu plodova jabuke ostvaruju pre berbe plodova, ali je zaraza moguća i posle ovog perioda. Zaštita plodova jabuke od prouzrokovača truleži se u najvećoj meri oslanja na primenu sintetičkih fungicida, pre berbe plodova. Zbog nepovoljnih ekotoksikoloških svojstava i pojave rezistentnosti, primena hemijskih fungicida tokom vegetacionog perioda se sve više redukuje, dok je njihova upotreba posle berbe plodova zabranjena u Evropskoj uniji, ali i u Srbiji. Imajući u vidu navedeno, kao i činjenicu da su zahtevi potrošača za zdravstveno bezbednom hranom sve izraženiji, istraživanja o alternativnim načinima borbe protiv patogena uskladištenih plodova voća sve više dobijaju na značaju. Etarska ulja pojedinih biljaka ispoljavaju snažno antifungalno dejstvo, te mogu biti potencijalni agensi zaštite plodova jabuke od prouzrokovača truleži.

AB  - Hydrolates, also referred to as hydrosols, floral or distillate waters, as well as aromatic waters, are produced in the same isolation process with essential oils by steam distillation. A small amount of essential oil constituents is dissolved in hydrolates providing specific organoleptic properties and flavor, as well as biological activity which makes them useful as raw material in many industries. Their popularity is still on the rise, especially in aromatherapy. The objective in this review is to analyze the chemical compositions of hydrolates and their corresponding essential oils, as well as biological activity of hydrolates (antimicrobial, antioxidant and antiinflamatory) and potential uses, not only in food industry for flavoring, and preservation of fresh-cut fruits and vegetables, but also as functional (soft) drinks. However, hydrolates can be used in aromatherapy and cosmetics, as well as in organic agriculture and aquaculture.
AB  - Hidrolati, koji se takođe nazivaju i hidrosoli, cvetne ili aromatične vode, kao i destilati, proizvode se u procesu destilacije etarskih ulja vodenom parom. Mala količina etarskog ulja nalazi se rastvorena u hidrolatima dajući im specifične organoleptičke osobine i ukus, kao i biološku aktivnost, što ih čini korisnim kao sirovinu u mnogim industrijama. Njihova popularnost poslednjih godina raste, posebno u aromaterapiji. Cilj ovog preglednog rada je da se analizira hemijski sastav hidrolata i njihovih etarskih ulja, kao i biološku aktivnost hidrolata (antimikrobna, antioksidativna i antiinflamatorna), ali i mogućnosti upotrebe, ne samo u prehrambenoj industriji kao prirodnih aroma i konzervanasa sveže isečenog voća i povrća, ali i funkcionalnih (bezalkoholnih) napitaka. Takođe, hidrolat i mogu da se koriste u aromaterapiji i kozmetici kao i u organskoj poljoprivredi i ribarstvu.

AB  - A total of 26 experimentally obtained retention indices on a logarithmic scale (log RI) fromThymus serpyllumessential oil were used to build a robust predictive model. The selected descriptors were used as inputs of an artificial neural network model to build a predictive quantitative structure-retention time relationship model. The coefficient of determination for the training cycle was 0.977, indicating that this model could be used for the prediction of retention indices forT. serpyllumessential oil compounds. These 26 compounds comprise about 99.8 % of the total oil, but among them only 6 compounds had the average relative concentration over 1 percent: geraniol (63.4 %), nerol (orcis-geraniol) (18.9 %), geranyl acetate (4.7 %),trans-caryophyllene (4.6 %), beta-bisabolene (2.0 %) and geranial (1.2 %). According to these results, it can be concluded thatT. serpyllumfrom village Sesalac (Serbia) belongs to geraniol chemotype, in total 82.3 % in both,transandcisforms (63.4 % and 18.9 %, respectively).

QSRR Model for predicting retention indices of Satureja kitaibelii Wierzb. ex Heuff. essential oil composition

AB  - A prediction model of retention indices of compounds from the aboveground parts of Satureja kitaibelii essential oil, obtained by hydrodistillation and analysed by Gas Chromatography coupled with Mass Spectrometry (GC-MS), was the aim of this study. The quantitative structure-retention relationship was employed to predict the retention time using five molecular descriptors selected by a genetic algorithm. The selected descriptors were used as inputs of an artificial neural network. Total of 53 experimentally obtained retention indices (log RI) were used to build a prediction model. The selected descriptors were used as inputs of an artificial neural network model, to build a prediction time predictive quantitative structure-retention relationship model. The coefficient of determination for the training cycle was 0.962, indicating that this model could be used for prediction of retention indices for S. kitaibelii essential oil compounds.

Bioactivity of essential oils from cultivated winter savory, sage and hyssop

AB  - Species of the Lamiaceae family have enjoyed a rich tradition of use for flavoring, food preservation, and medicinal purposes, due to their curative and preventive properties. Cultivated winter savory (Satureja montana L.), sage (Salvia officinalis L.) and hyssop (Hyssopus officinalis L.) are produced for seed, herb, and essential oil. Dominant compounds in S. montana essential oil were carvacrol (43.2%) and thymol (28.4%), while CIS-thujone (27.1%) and camphor (19.3%), followed by trans-thujone and 1,8-cineole were the major compounds in S. officinalis essential oil. As for H. officinalis essential oil, CIS-and trans-pinocamphone (41.1% and 20.5%, respectively) were the most abundant compounds, followed by b-pinene. S. montana essential oil exhibit the highest antimicrobial properties, as well as antioxidant capacity, compared to other tested essential oils. Furthermore, H. officinalis essential oils showed higher antioxidant activity than that of S. officinalis. The aim of this investigation was to determine the composition and bioactivity of essential oils of mentioned varieties. Presented results show that S. montana essential oil could be proposed as a valuable source of natural preservatives.

AB  - The aim of this book chapter was to highlight the great importance of plants from Apiaceae family as functional food products, focusing on its anticancer properties. The plants that will be discussed for their anticancer properties include: caraway (Carum carvi L.), dill (Anethum graveolens L.), anise (Pimpinella anisum L.), fennel (Foeniculum vulgare Mill.), coriander (Coriandrum sativum L.), celery and celeriac (Apium graveolens L.), lovage (Levisticum officinale Koch.), carrot (Daucus carota L.), parsley (Petroselinum crispum L.), parsnip (Pastinaca sativa L.), angelica (Angelica archangelica L.), cumin (Cuminum cyminum L.), chervil (Anthriscus sp.) and eryngo (Eryngium campestre L.). Leaves, roots and seeds of these plants are widely used as spices, flavoring agents and dietary supplements in the folk medicine and pharmaceutical industry. Furthermore, roots and leaves of these plants are valuable sources of phytochemicals used on a daily basis as food with nutraceutical potential. Their essential oils have characteristic aroma and have potent antioxidant and antimicrobial properties, which contribute to their ability to serve as natural food conservatives. Additionally, due to their anticancer, hypoglycemic, hypolipidemic, hepatoprotective and other activities these plants are widely used as alternative and healthy food for the prevention and treatment of many disorders

Evaluation of caraway essential oil from different production areas of Serbia

AB  - Caraway fruits contain essential oils that give caraway its characteristic aroma. This paper evaluates quantity and composition of the essential oil from the annual caraway grown in different production areas of Serbia. Experiments were conducted in three production areas: Banat, Backa and Srem, during two years. The fruits contained 3.95% of oil on average. The highest content of essential oil was obtained in the production area of Banat, a part of Serbia where environmental conditions are very favourable for cultivation of medicinal plants. Weather conditions have not a significant influence on the content of essential oil in caraway fruits. However, weather conditions as well as production region had a great influence on seed yield and essential oil yield. There were 22 compounds determined in caraway essential oil by GC/MS. The main components were carvone and limonene, whose mixture constituted from 97.69 to 98.62% of total oil composition. Carvone/limonene ratio was 0.58% on average, therefore, it can be concluded that this annual caraway belongs to limonene chemotype.
