AB  - Sorghum grain (Sorghum bicolor L. Moench) is a gluten-free cereal with excellent nutritional value and is a good source of antioxidants, including polyphenols, as well as minerals with proven health benefits. Herein, the phenolic composition, elemental profile, and antioxidant activity of sixteen food-grade sorghum grains (S1–S16) grown under agroecological conditions in Serbia were determined. Nine phenolic compounds characteristic of sorghum grains, such as luteolinidin, 5-methoxyluteolinidin, luteolidin derivative, luteolidin glucoside, apigeninidin, 7-methoxyapigeninidin, apigeninidin glucoside, and cyanidin derivative, were quantified. The antioxidant potential of the analyzed sorghum grains was evaluated by UV/Vis (DPPH, ABTS, and FRAP) and Electron Paramagnetic Resonance spectroscopy (hydroxyl and ascorbyl radical scavenging assays). The content of macro- and microelements was determined by Inductively Coupled Plasma Optical Emission spectroscopy. Theoretical daily intakes of selected major and trace elements were assessed and compared with the Recommended Daily Allowance or Adequate Intake. Sample S8 had the highest amount of phenolic compounds, while S4, S6, and S8 exhibited the strongest antioxidative potential. The sorghum studied could completely satisfy the daily needs of macro- (K, Mg, and P) and microelements (Se, Zn, Fe). Pattern recognition techniques confirmed the discrimination of samples based on phenolic profile and elemental analysis and recognized the main markers responsible for differences between the investigated samples. The reaction between hydroxyl radicals and luteolinidin/apigeninidin was investigated by Density Functional Theory and thermodynamically preferred mechanism was determined.

Determination of selected macro- and microelements in black chokeberries (Aronia melanocarpa L.)

AB  - Black chokeberries (Aronia melanocarpa L.), belonging to the Rosaceae family, are considered to be functional food due to the presence and the high content of various bioactive components such as vitamins, minerals and polyphenols [1]. Aronia berries are a good dietary source of essential elements, in addition to their high content of beneficial nutrients for health and well-being [2]. There is little research on the mineral composition of the chokeberries, so the presented study is focused on the determination of twenty-four elements in black chokeberry fruits. Analysed elements were: aluminium (Al), arsenic (As), boron (B), barium (Ba), calcium (Ca), cadmium (Cd), cobalt (Co), chromium (Cr), copper (Cu), iron (Fe), potassium (K), lithium (Li), magnesium (Mg), manganese (Mn), molybdenum (Mo), sodium (Na), nickel (Ni), phosphorus (P), lead (Pb), sulphur (S), selenium (Se), strontium (Sr), vanadium (V) and zinc (Zn), using the optical emission spectrometry with inductively coupled plasma (ICP-OES) technique. The multi-elemental composition and substances performing a beneficial impact on health can vary depending on factors such as cultivar, fertilization, maturation or climate conditions, as well as the date of their harvest [3]. According to the obtained results, concentrations of major elements in the sample were: 281.94 (Ca), 1587.07 (K), 147.19 (Mg), 314.24 (P) and 92.18 (S), expressed as μg g -1. Concentrations of the toxic elements As, Cd and Pb were below method quantification limits in the studied sample.

Diversity of nutritional quality in IFVCNS grain sorghum collection

AB  - The general concern for the development of functional foods has created the need to study and use new food ingredients that would be involved in improving health condition. Sorghum (Sorghum bicolor L. Moench) gains more interest since it has a gluten-free grain and represents a rich source of nutrients and biologically active compounds. The aim of this work was to test the nutritional quality of 178 genotypes from the sorghum grain collection of the Institute of Field and Vegetable Crops (Novi Sad, Serbia) produced in the agro-ecological conditions of Serbia. The main nutritional quality parameters that characterize the biological value of sorghum grain (according to CXS172-1989 are contents of ash-max. 1.5%, protein-min. 7.0%, fat-max. 4.0%, and total tannin-max. 0.5%) were analyzed in order to select genotypes suitable for human consumption. The grain of the tested sorghum genotypes had a total oil content (determined by the Soxhlet method) in the range of 1.55 to 6.62% of dry matter, while the total protein content (determined by the Kjeldahl method) ranged from 8.67 to 19.76% of dry matter, on average.

AB  - Cilj istraživanja je bio da se uradi procena rizika po zdravlje ljudi od upotrebe mineralnih voda iz Vrnjačke Banje. Procena je izvedena na osnovu rezultata ICP-OES analize hemijskog sastava voda i na osnovu bakterijske analize uzoraka. Ispitan je uticaj šest potencijalno toksičnih elemenata (As, Ba, B, Mn, Ni i Sr). Analizom akutnog i dugoročnog koeficijenta rizika po zdravlje ljudi utvrđeno je da ne postoji povišeni rizik osim dugoročnog rizika od pojave kancerogenih oboljenja usled prisustva barijuma. Vrednosti koeficijenta rizika, u tom slučaju, su bile oko 0,01 što je deset puta više od donje granične vrednosti. Rezultati bakterijske analize voda ukazali su na povišeno prisustvo aerobnih mezofilnih bakterija (25-90 jedinki/mL na 22°C tj. 6-28 jedinki/mL na 37°C) u uzorcima 03, 06 i 07 i sulforedukujućih klostridija u uzorku 05 (15 jedinki/50 mL).
AB  - The aim of this work was to make assessment of human health risk caused by consummation of mineral waters from Vrnjačka Banja. This evaluation was made based on results of chemical (ICP-OES) and bacteriological analysis of water samples from this spa. The influence of six potentially toxic elements (As, Ba, B, Mn, Ni i Sr) was examined. Acute and long-term hazard quotient (HQ) analysis has showed that there is no elevated health risk for human other than long-term risk of potentially carcinogenic diseases development due to the presence of barium in water. In that specific case, HQ values were about 0.01 which is ten times more than the lower limit value. According to bacteriological analysis of samples presence of aerobic mesophilic bacteria was determined (25-90 CFU/mL at 22°C ie. 6-28 CFU/mL at 37°C) in samples 03, 06 and 07, meanwhile, sulfite-reducing clostridia was detected only in sample 05 (15 CFU/50 mL).

AB  - U okviru ovog rada izvršeno je preliminarno ispitivanje kvaliteta prirodnih mineralnih voda sa teritorije Vrnjačke Banje (U1-U7) određivanjem osnovnih fizičko-hemijskih  parametara kao što su: temperatura, pH vrednost, provodljivost, mutnoća, sadržaj hlorida i ukupnih organskih materija, kao i sadržaj amonijaka. Posebna pažnja stavljena je na ispi tivanje sadržaja odabranih makro - i mikroelemenata za čije određivanje je korišćena ana litička tehnika induktivno kuplovana plazma sa optičkom emisionom spektrometrijom, ICP-OES (eng. Inductively coupled plasma - optic emission spectrometry). Koncentracije makroelemenata Ca, Mg i Si u analiziranim uzorcima bile su u granicama dozvoljenih vrednosti, dok je višestruko povišena koncentracija Na detektovana u uzorcima U2, U3, U5 i U7. Povišene koncentracije mikroelemenata zabeležene su u uzorcima: U6 (As); U3-U5 (Se); U1 i U4 (Fe); U1-U4 i U7 (Mn), dok koncentracije ostalih mikroelemenata (S, Ni, Cd) su bile u okviru dozvoljenih vrendosti po Pravilniku o ispravnosti vode za ljudsku upotrebu.
AB  - In this paper preliminary tests of the quality of natural mineral waters from the Vrnjacka Banja area (U1-U7) were carried out by determining basic physical and chemical parameters such as: temperature, pH value, conductivity, turbidimetry, content of chloride and total organic substances, as well as the content of ammonia. Particular attention was paid to testing the content of selected macro- and microelements by using analytical techniques inductively purchased plasma with optical emission spectrometry, ICP-OES (Inductive Coupled Plasma - Optical Emission Spectrometry). The concentrations of macroelements Ca, Mg, and Si in the analyzed samples were within the limits of the allowed values, while the multiplied concentration of Na was detected in samples U2, U3, U5 and U7. Elevated concentrations of microelements were recorded in the samples: U6 (As); U3-U5 (Se); U1 and U4 (Fe); U1-U4 and U7 (Mn), while the concentrations of other microelements (S, Ni, Cd) were in the allowed values according to the National legislation of water for human use.

Chemical features and quality assessment of the natural mineral waters in the Vrnjačka Banja area, Serbia

AB  - Water is one of the most precious natural resources. The aim of the 
study was a preliminary examination on mineral waters quality (S1–S5) in the 
Vrnjačka Banja area, Serbia, through the standard physico-chemical parameters: 
temperature, pH value, conductivity, turbidity, content of chloride as well as the 
total organic matter. All samples of water were collected and analysed in the 
period April-May 2017. The obtained results were compared to the National and 
World Health Organization (WHO) water quality standards. The results for 
temperature, pH and conductivity were within the values defined by Regulation 
on the quality of mineral water, except for the conductivity in samples S2 and S5 
that were slightly above prescribed (2980 and 3460 µS cm-1, respectively). 
Increased turbidity was observed in the sample S4 (5.24 NTU). The 
concentrations of total of organic matter in all analyzed samples were around 45 
mg L-1 which indicates that the found values were 9 times greater than allowed 
and it can be result of a number of natural factors or the geographical location of 
the source itself.
